learned from school the theories into the reality, but also to improve soft-skills during the course at Hoa Binh Restaurant Surely, those are the precious experiences, insights of how to work and manage well in the restaurant, the great preparation for my career in the future During the practicing time, I was received enthusiastic supports by many people; therefore, I would like to thank everyone who helped me completing my internship course and this report First of all, I would like to express my deep gratitude to the director of Hoa Binh Restaurant Mr.Sau, who distributed the opportunity for me to complete my internship within the great consequence In addition, I would like to send profusely thanks to Hoa Binh restaurant manager, Mr Nguyen Van Nghiem, who created prerequisites for me to have a place to practice my profession, and Mr Loc who guided me to practice at Hoa Binh 1, usually helped and taught me in my internship duration I will not forget to thank Page Chu Th ng DH18TA PART A: OBJECTIVES An Giang is one of the most places within the natural sceneries in the Mekong Delta, with famous areas such as: Tra Su cajuput forest, Lady Chua Xu Temple, and temple system everywhere Therefore, in order to meet these necessary needs for tourism in recent years, An Giang has made great changes, resulting in an enormous increase in the number of international tourists In that general context, Hoa Binh Hotel has also invested a lot to attract tourists and achieve good results in hotel-restaurant service field This is a reason I have chosen Hoa Binh restaurant as a good place to complete my practicing time After the internship course at Hoa Binh restaurant, I had picked up a lot of experiences From the setup process to the serving process in the private dining room, the wedding, and the buffet and other events In this report, I would like to give some general ways of my experience to help the students in the next schoolyear have a better understanding of this profession However, the shortcomings cannot be avoided during the time, I am looking forward to receiving feedbacks from teachers and friends so that I may rectify what I have not done well yet Page Chu Th ng DH18TA PART B: CONTENTS I Introduction General information about Hoa Binh restaurant Picture 1: Hoa Binh Hotel and Restaurant 1.1 History Hoa Binh used to be built in 1993 with 1-star standard including hotel and garden coffee which was belonged to as Hoa Binh Club Private Enterprises After a duration of operation, the hotel was once upgraded to stars widespread and renamed Hoa Binh hotel - restaurant in 2009 On December 24, 2010, Hoa Binh hotel restaurant once again used to formally put into an operation Hoa Binh hotel - restaurant is one of the tourism activity structures of the Hoa Binh club It was put under the management of the military command of An Giang province 1.2 Location Hoa Binh Hotel is located in a special position in the heart of Long Xuyen city, An Giang province, 300 meters from An Giang Museum, near Asia Plaza, Vincom Plaza, Coop Mart Long Xuyen, traditional market and the administrative department of the province From here, you luxurious design, there are conference and wedding restaurant consists hall A and hall B with a total capacity of more than 600 guests Zone A: Located on the ground floor of the restaurant, it is a suitable place to hold weddings, festivals, and conferences on a large scale Lobby B restaurant: which is located on the ground floor, next to zone A, and one layer of glass It is a suitable place for events such as: weddings, birthdays, conferences, meetings, discussions, with a small number of fewer than 100 guests that brings a cosy family atmosphere Page Chu Th ng DH18TA Zone B Ground floor: This place includes Reception Hall for Guests to check-in and check-out here Besides, there is also a bar serving drinks st First floor restaurant: Located at the floor of the hotel, which can hold conferences, festivals, weddings with a medium scale Second floor: there is an air-conditioned dining room serving À La Carte, and it is used to set menu for guests staying at Hoa Binh hotel Especially, this place also serves amateur music, nearby Spa and Massage area, Steambath, and Jacuzzi From third floor to seven floor: there are 60 bedrooms including tip-top rooms, deluxe rooms, 10 superior rooms and 39 standard rooms and room housekeeper There has twelve rooms in each floor Each room at Hoa Binh features a cozy white-yellow, wood tone, is fully equipped with amenities including a bathtub, a water heater, a mini-bar, Satellite TV, air-conditioning, wooden cabinets, etc Page Chu Th ng DH18TA Floor 8: Coffee bar, where breakfast, buffet for guests has been served at Hoa Binh hotel Especially, there is a sky view where we can enjoy the bustling city of Long Xuyen II An assessement of the internship Advantages Disciplines in the Internships are considered as indispensable part, especially the field of study that requires high practicality and skills like the restaurant industry The internship was a vital step in the learning technique that helped me know the linking between reality and the theories learned Therefore, I have learned many things and may apply them to future work In the practicing time, I recognized the necessity of some topics in class Any gentle skills and some other abilities have made me reverently a connection with the job Page 10 Chu Th ng DH18TA The staffs in Hoa Binh restaurant were very enthusiastic, always be ready to help and answer any questions The management board provided the best conditions for the me to complete my internship Disadvantages Besides the advantages, I also encountered many difficulties during the practicing time Firstly, the largest problem for me was the opportunity to communicate with foreigners Due to the effect of covid-19, most of the visitors right here are local; therefore, I could not use my English special skills as if it is the strong point Besides, this is my first time that I have been to work, so I feel like as a fish out of water Everything seems new to me because I have never worked before in this field Finally, in the course of the internship, the restaurant supervisor assigned me solely one venture which is to serve That is the reason why I had not been tested with professional reception and expert chamber The reason of disadvantages and solution I think that the difficulties I encountered were due to lack of the necessary skills even though I have a good-preparation and did not thoroughly research enough the restaurant information before going to practice Secondly, due to the influence of external factors causing the number of foreigners here For those reason, everyone should prepare in advance the necessary knowledge to help the practice process to take place smoothly and limit difficulties You should make sure that learning the basic knowledge foundation before practicing and not let "water to your feet jump" Besides that, I also have tried to everything as quickly as possible to use the time to talk with foreigners as much as I could Above all, I spend my free time talking and learning with my friends in English Page 11 Chu Th ng DH18TA What I get from the internship I have always had the attention to the hospitality industry like restaurants that fosters me to spend my internship experience at an international three-star hotel as Hoa Binh I hope that I can widen my knowledge about expertise and practice my English competence for my future job Therefore, this part is thing to that I have realized and performed during the internship time I was a trainee at Hoa Binh hotel - restaurant Through my weeks of internship, I only served in a service role so most of my experience came from this position My labor as a trainee there promoted me practicing English in other conditions In addition, I have experiences of fixing some problems in the hospitality industry All the menus in the restaurant are in English; therefore, it is easy for me to get to know about the names of all the dishes and certainly recommend them to foreign guests The first week, because we not get familiar with the work yet, we mainly did the duty of ironing for the restaurant Starting in week two, we learned how to fold napkins and set up a table Then we practiced and learned how to serve guests It is a job that is funny even though it is a bit tricky and complicated I would give the details of the table set-up and serve guests right below 4.1 Kinds of table set-up a Table Put tablecloths and cover on the table b Eating Utensils and others Set up in Wedding A dining table with 10 guests depends on the guest menu to setup We place the positioning plate, then the bowl and a napkin on the bowl It is sure one spoon and chopsticks in the right hand On the left side, there will be a cold towel Page 12 Chu Th ng DH18TA The cup is placed at the top of the bowl, and the handle is turned to the right In the center of the table, there will be a vase and candle (if it is the afternoon party or requested by guests) According to the menu, if guests order soup, there will be 10 cups placed around the vase All tools must be two centimeters away from the table and one centimeter apart * The usual non-dining conference on the table will have a vase and 10 bottles of water around a vase and a buffet counter located nearby À-la-cart The dining table in A-la-cart is not different from the dining table at the wedding because the guests here are mostly locals and there are quite a few foreigners, so the Asian dining tables will be set up as a priority unless the guests require a palanquin another setup because the number of buffet is calculated according to the room price Some rooms are for three people, but the room rate only allows guests to use the buffet Note if guests forget to bring a buffet ticket that can be checked later Page 14 Chu Th ng DH18TA Picture 7: Checking buffet ticket You should not take the initiative to clean the dishes when the guests have not left the restaurant yet This is impolite behaviors and may lead to the misunderstanding the customer thinking that the staffs try to leave the customer out soon Therefore, only when customers actively request or need space to serve new dishes the waitresses gently suggest cleaning the table The utensils are always prepared with cassava to serve when customers request Page 15 Chu Th ng DH18TA You should not put ice over the glass, because the ice will touch the nose of the guests when they drink and it will make an uncomfortable feeling to the visitors It is a prohibitive thing that you should not not say NO to guest requests, must report superiors if it cannot be resolved automatically You should always maintain good personal hygiene: nails must be cut short, unpainted, hair in a bunch, and body odor-free (including the smell of hand sanitizer or shower cream) C CONCLUSION AND SUGGESTION I Conclusion After a short internship at Hoa Binh for about two months, I realized that this place is a good environment for students to practice their major if they have a passion for this industry Through the internship, I learned a lot of things, got more experience, learned many useful things, learned interesting information, and especially recognized my own the strengths and weaknesse It is very helpful in my future work II Suggestions Suggestions for the Internship Company Hoa Binh Hotel and Restaurant Hoa Binh Hotel and Restaurant is absolutely a magnificent vicinity for students to practice, but I have some tips for it to be more ideal and appropriate for interns First of all, in my opinion, the restaurant management must allow the interns to a range of works so that they have extra trips and improve their expert skills During eight weeks in Hoa Binh 1, the interns only did as a waitress This makes interns with other skills deficits and bored by the amount of familiar work The interns want to experience a range of departments such as the housekeeping department, front office department, Page 16 Chu Th ng DH18TA sales department, or food and drink department I wished I could many positions at some stages in the internship time Suggestions for Future Interns If you desire to talk or meet foreigners, you need to select a hotel restaurant nearly the city center or tourist area To ensure your work is unobstructed, it is indispensable that you need to speak English fluently and clearly Besides, you also need to equip some skills such as problem-solving skills, teamwork skills, public speaking skills, and time management skills Having great spirit and health is also the rule for the job in the industry Not only Hoa Binh Hotel and Restaurant, but most other places work at their best, so proper health is necessary Finally, I have sincere advice for you that if you not love this job, you should not choose it because you can give up early or you are no longer able to undertake the whole assignments You should choose a job which fits your passion One suggestion for An Giang University School should create good conditions for the students to internships from the second year of study instead of the final year because then students will have enough time to correct their shortcomings Especially during the final year, there are so many things to pay attention to so the internship will bring a lot of pressure Furthermore, the internship report
