phenomenon World Travel and Tourism Council – WTTC (International Travel and Tourism Council) announced tourism as the largest economic sector in the world, surpassing the electronics, automobile manufacturing and agriculture The tourism industry in some countries is also the most important source of foreign exchange in foreign trade In our country, the tourism industry has also been oriented to become a key economic sector, actively supporting the development of many other economic sectors such as aviation, transportation, Calendar is composed of main activities: accommodation business (including activities related to providing bedroom services, dining, and entertainment) and travel business (including some activities such as tour design, tour guide, ) In this report, the scope of research on tourism is only researching hotel business activities, particularly food and beverage (F&B) business activities I Purposes of the report After nearly months of the internship at Sunset Beach Resort & Spa, I write this report to the Faculty to report about the practice process The purpose is to let the teachers know about my work during my internship at this resort Besides, from my practical experience here, I will talk about the food serving process as well as the advantages and disadvantages of the restaurant, then give solutions or ideas to contribute to the completion of the regulation service at the restaurant of Sunset Beach Resort & Spa II Content of the report Except for the beginning and the acknowledgement, my content consists of parts:  Description of the company Operation Accomodation The resort with 117 rooms are carefully designed in every detail with 95% of the rooms with direct views to the sea This resort consists of types of rooms: Deluxe Room is the standard room of Sunset Beach Resort & Spa and uses one King bed or two single beds with modern design, comfortable to meet all the needs of visitors when coming to this resort It consists of 13 rooms which have a size of 32-34 m Picture 2: Deluxe Room Deluxe Ocean View rooms have an elegant and modern design with balcony that looks out to the ocean, mountain, palm tree farm or glamorous sunset of services: Set Menu, Buffet, À La Carte Menu, BBQ party, …The restaurant is open for breakfast buffet from 6:30 am and the breakfast buffet ends at 10:00 am After that, the restaurant will serve an la carte menu or combo dishes from 11:00 am to 10:00 pm Moreover, the restaurant also has special promotion packages such as discounts, gifts of cake or wine when customers order party such as birthday parties, gala dinner,… When coming here, customers can enjoy the wonderful dishes from the professional chefs of the restaurant Besides, to help customers enjoy the romantic moments in their own rooms, the restaurant also offers in-room dining service for guests with a variety of menu and uniquely prepared In addition to serving inside the restaurant area, it also serves customers on the lawn area next to the beach from 3:00 pm to 9:30 pm In this place, customers will be enchanted by the melodious music of the wind combined with the sounds of murmuring waves, mixed Picture 10: Lawn area of the restaurant with the perfume of the grass and green trees These things could made them find all the anxieties of life being washed away Moreover, it is also great that visitors can enjoy the specialties and drinks of the restaurant while enjoying the beauty of sunset on the pearl island Sunset Beach Bar is the most original signature of Sunset Beach Resort & Spa This place has constantly been considered one of the best beach bars in Vietnam Here, customers are served with various kinds of drinks, excellent cocktails and simple but fresh food; moreover, they can enjoy night parties with trendy music played by technologically advanced sound system and top-rated DJs Picture 11: Sunset Beach Bar Meetings and Events Sunset Beach Resort & Spa consists of a large conference room and a smaller room with well-invested modern facilities and professional service staff to meet all needs of conference or seminars organization Each room can accommodate up to 60 guests Weddings to explore Phu Quoc Island freely and make their trip becomes more perfect For helping the guests be more convenient during their vacation, the resort also offers a two way shuttle bus service to the airport and to the resort for all guests PART C: INTERNSHIP ACTIVITIES I Describe the jobs during praticing time After nearly months of the internship at Sunset Beach Resort & Spa, my main job is at the restaurant department Soleil Fusion Restaurant has about staff and manager (excluding kitchen staff) They are friendly, so it made me easy to get along with others from the beginning The first day I arrived at the restaurant, I started to get to know and greet people and then I was guided by the captain of the shift and started doing simple tasks like cleaning up dirty tools on the customer's table and set up new tools (placemat, fork and knife) I was given information about the menu and the department by the manager of the restaurant After nearly a week of working under the guidance of the staff in the restaurant, I began to get used to the job and know what to there Through nearly months at the restaurant, I was assigned to some different jobs (like waitress and hostess) So, I will list my responsibilities for a working day below The working time is divided into shifts, morning and afternoon shifts (M6&A2) Each shift will last hours M6 & A2 are just the name of my shift  In the morning shift: Working as a waitress : The working time will start at 6:00 am and will end at 2:00 pm The first thing to start on every shift was to go to the security room to take attendance Then I went to the front desk to get a list of customers who registered for the breakfast buffet at the restaurant to know the specific number of guests to prepare drinks to suit the number of guests After that I started to prepare drinks for the buffet The drinks served for the restaurant's breakfast buffet were quite diverse, often including fresh milk, soy milk, purified water, and types of fresh juices such as watermelon juice, lime juice, passion fruit juice, pineapple juice, guava juice or Lipton tea with lemon (these juices will be changed daily according to the quantity of fruit that were preordered by the staff) Based on the number of customers, squeezing fruit for the right amount, if the number of customers for breakfast is about 200 people, I will squeeze about watermelon, 10 pineapple, fresh milk and soy milk each with boxes, jugs of coffee and pots of green tea or ginger tea However there were also days that I did not work at the drink counter but would prepare for buffet breakfast such as cleaning and setting up tables, making sure all tables have salt and peppers shakers full filled, toothpicks, tissues, preparing name tags of food and being correctly positioned with the food, turning on music, TV and air conditioning At 6:30 am, I started to welcome customers and served When seeing the customers, I must actively welcome them with a cheerful and enthusiastic attitude Besides, I had to keep an eye on which trays were running out of food and report to the kitchen department to quickly replenish them Furthermore, I occasionally took care of my customers by checking if they were satisfied with the restaurant's food and service and then I thanked them for choosing the restaurant's service And one more indispensable thing is asking for permission to remove dirty dishes, cutlery on the table so that the customers have space to put other dishes When they finished eating, I cleaned the table and set up a new set of utensils At about 9:45 am, I started to inform the customers that the buffet service time will run out in 15 minutes and we will clear the food into the kitchen at 10 am, if they want to take some food, they can pick up the food before the buffet time ends After the time was over, I started cleaning the buffet station, the drink counter, brought the dirty tools inside for steward department and set up new tables for lunch according to restaurant standards to serve in the form of an la carte menu After finishing, I helped the staff to wipe dishes, glasses and utensils, knives and chopsticks and filled them into the service stations and buffet station Then I went for a meal break of 30 minutes only Next, I followed the sequence of service in lunch service: greeting the customers, assisting the customers to the table, unfolding the napkin, introducing the menu and up selling (open the first page of the menu when offering the customers), taking and repeating order, sending order, serving drink and food, checking satisfaction and payment At about 1:00 pm, I went to clear the dirty utensils on the floors of the resort with one colleague After finishing, if there were no customers in the restaurant, I would fold the tissue to prepare for the next day, hand over the work to the next shift Sometimes, I continue to be trained in another job, a hostess When the restaurant opened, my job was open the door to welcome customers Then I asked for their room number to check with the list by saying "May I have your room number?" and assisted them to the table I need to say ‘thank you’ when the customers finish their meal at the restaurant After breakfast time, I will the same jobs as mentioned above of a waitress  In the afternoon shift: I did the work in the following sequence: Taking hand over and read log book Following the duty assignment Preparing utensils to bring them down to the lawn next to the beach Serving the customers as sequence of service in lunch Going for a meal break at 6:30 pm At about 9:15 pm, I notify my customers that I will hand over the Setting up service station including service and payment to the Sunset menu, mats, trays, tablet, candles, Beach Bar coasters, utensils,… Cleaning and setting up lawn area Clearing all the tools and bringing them to the restaurant 10 Setting up tools for morning buffet 11 Calculating the total sales revenue 12 Closing all doors II Advantages and Disadvantages in the praticing time at the restaurant Advantages The praticing time is the time I recognize the benefits of some subjects in class, English speaking ability and some other skills have made it easier for me to get used to with the job Besides, I also received the enthusiastic help and guidance from the staff in the restaurant and was able to work in groups, so I could easily discuss problems while learning from experience with friend Another advantage is that I was provided with accommodation as well as meals a day by the company During the internship, I was given an opportunity to communicate in English with a number of foreign customers to improve my listening and speaking skills Besides English, knowing a little Chinese also helped me be more convenient to interact with my customers who came from China, so I had chances to enhance my Chinese as well Disadvantages Firstly, I not have much professional knowledge about the restaurant profession and encountered many confusing terms about the restaurant industry Next, customers in different countries sometimes speak English in different ways, so it is difficult for me to listen to them clearly Finally, I lacked of experience in dealing with customer complaints at the beginning III The reason of disadvantages and solutions: The reason of my first disadvantage is that I only studied restaurant and hotel profession at school for one semester and only learned the basic, so I did not have much knowledge as well as specialized terms about this sector I think if I learn more about restaurant and hotel profession, I will the job better The next reason is because I did not practice listening and communicating English regularly So to overcome it, I will try to listen English more on the Internet and learn to communicate as well as listen to the voices of many countries to be able to communicate better The last reason is that this was the first time I go to work in a resort, so I felt scared sometime and lacked of soft skills to solve problems I thnk I need to learn more experiences from life and learn more soft skills IV Experiences learned from the internship I believe that I have gained many valuable experiences during my internship in Sunset Beach Resort & Spa Firstly, my English skills have improved Most of the customers in Sunset Beach Resort & Spa are foreigners who come from many different countries Therefore, English is the main language used to communicate with others That is very useful for me to enhance my listening and speaking skills upon my talk to my customers Secondly, my soft skills have also improved I was taught some skills such as dealing with customers’ complaints, getting relation with customers or controlling the emotion during the internship At the beginning, I was really confused and unhappy when the customers complained about the restaurant For instance, the customers waited for dish for a long time, the kitchen made the wrong dish or the food was not good,…I did not know the best way to solve this problem However, I can confidently solve the same problem related to the customers’ satisfaction now Thirdly, the lesson of being proactive and confident, I used to be quite shy when communicating with people, but now I can actively get to know people, actively learn about work at the internship, take the initiative to propose ideas and work with everyone I think that these things may help me integrate more quickly into the new environment in the future Finally, I have learned how to reasonably manage my time schedule Serving customers is a job that asks for active and nimble and also requires me the division 11 of appropriate time so that I can everything more efficiently I know that all of what I have learned here is not enough to be proud of myself However, it will be a good foundation with useful knowledge for me to explore myself and get future job PART D: CONCLUSION AND SUGGESTIONS I Conclusion During nearly months of internship at the resort, I have basically completed my internship tasks well, at the same time I have also learned many things, known my own strengths and weaknesses and learned practical lessons from the working process This helps me to be more mature and more confident when preparing for the job in the future Besides valuable lessons, this place also left me with memorable memories that I will probably never forget Thanks to the internship here, I now understand more what steps I need to take to get my goals II Suggestions Suggestions for the internship company Through my internship at Soleil Fusion Restaurant, I realized that the quality of the restaurant's food service has met a number of customers' needs However, there were also a few things that need to be improved Firstly, in my opinion, the restaurant needs to equip more food utensils, especially spoons and chopsticks, so that when customers are crowded, the staff will not need to wait for the steward to wash, moreover, the staff need to dry them by themselves This not only wastes time but also affects the service quality of the restaurant because it takes one person to wipe them Secondly, The restaurant should be decorated according to the characteristics of each season, holidays or anniversaries of the year to show the aesthetics as well as create a new and comfortable feeling for customers Thirdly, the restaurant needs to add more new dishes to diversify the menu and meet the needs of customers 12 Finally, improving the quality of staff with service skills training courses and practice English skills Moreover, restaurant managers need to consider the shortage of manpower and have a reasonable recruitment plan to always ensure the best service quality Suggestions for Faculty of Foreign Language at An Giang University The school as well as the Faculty of Foreign Language should extend the internship so that students can become more familiar with the working environment in the future In addition to studying theory in class, the Faculty should create conditions for students to practice more (especially the subjects related to professionalism) to be able to apply in to practice and memorize knowledge longer The Faculty should open more courses related to hotel and restaurant for students who want to work in this enviroment to be able to fully equip their
