mạch (Chenopodium quinoa Willd.) trồng trồng vùng Andes cách 7000 năm đặc biệt quan trọng người dân nước Nam Mỹ [14] Ở đây, hạt diêm mạch sử dụng làm thức ăn thay cho loại ngũ cốc thơng thường khác Hạt diêm mạch có chứa đầy đủ thành phần dinh dưỡng quan trọng protein, lipid, carbonhydrate, loại vitamin khoáng chất Với hàm lượng protein cao, chiếm từ 13,8 đến 21,9% (tương đương với trứng thịt, gấp lần so với gạo ngơ), protein hạt diêm mạch cịn chứa đầy đủ amino acid thiết yếu, đặc biệt lysine Thành phần carbonhydrate có chứa đến 14,2% chất xơ [12] Các loại vitamin B, C, E khoáng chất Ca, Fe, P, K chiếm tỷ lệ không nhỏ hạt diêm mạch Đặc biệt hạt diêm mạch không chứa gluten chất gây hội chứng celiac (là bệnh đường ruột tự miễn di truyền kích hoạt việc ăn loại ngũ cốc có chứa gluten lúa mì, lúa mạch, lúa mạch đen) Tất điều làm cho hạt diêm mạch trở thành loại thức ăn quan trọng dành cho người đặc biệt với người ăn kiêng mắc hội chứng celiac Về giá trị kinh tế, diêm mạch sản phẩm hàng hố có giá trị cao, góp phần khơng nhỏ xố đói, giảm nghèo đảm bảo an ninh quốc gia [14] Giá diêm mạch trung bình tồn cầu tăng đáng kể từ năm 2012 đến năm 2014, từ 3,21 lên 6,74 đô la Mỹ kg xấp xỉ đô la Mỹ/kg diêm mạch hữu Mặc dù sau năm 2014, giá diêm mạch giảm mạnh tính đến tháng 12 năm 2021, giá trung bình khoảng 1,64 la Mỹ/kg hạt (giá FOB, Free On Board) nhà sản xuất lớn bao gồm Bolivia Peru [33], thị trường diêm mạch nhập vào Việt Nam dao động từ 15 đến 35 đô la Mỹ cho kg Cây diêm mạch có khả thích ứng rộng rãi với nhiều vùng sinh thái khác giới, nơi có điều kiện khắc nghiệt mà trồng
