khoai tay vdi ti le 10% so vdi khoi hot nhao se tao san pham co dp no cao banh sau chien co cau true xop mau sac va miii vj tot • Ti le N a H C va acid citric su dung la 2% va 0,25% so vdi khoi bot nhao tao cho banh co dp no cao cd gia tri cam quan ve cau tnic va miii vj sau chien tot • Ti le duong va tieu su dung la 1,5% va 1.2% so vdi khoi hot nhao tao cho banh cd dp trang sang tot gia tri cam quan ve miii vj va cau true sau chien tot • Dp am cua khoi bot trudc hap la 50% se lam banh ho hoa hoan toan qua trinh hap kha nang gift cua banh cao banh no tot dong thai banh co dp trang sang va gia tri cam quan ve mau sac miii v i va cau true cao • Say banh o nhiet dp 60°C den dp am dimg la 12% cho banh co mau sang dep dp no cao banh co cau true xop banh khong ran nut, gia tri cam quan ve mau
