The subject developed and implemented the project with applying the novel technology

in the processing and producing an enteral feeding food using Vietnamese natural sources In order to assure the quality of the product, the study to test the digestibility of the product has

been carried out in both in vitro and in vivo Then, a clinical trial was conducted in various

categories of neurologic patients to evaluate the effectiveness and safety of the product The thesis has achieved some significant results as follows:

Developed formulate of raw materials for the process of processing standard formula (1 kcal/mL)

Set up loin pork and soy processing technologies and optimized all factors that impact on the protein hydrolysis of raw meat and soybean in the processing to meet high-performance and make the hydrolysis of small molecular weight 1.53kDa and the peptides of molecular size under 8.5kDa and to get a suitable lowest viscosity and particle size product running through the feeding tube with the proper proportion of short chain peptide and ratio BCAA as 2:1:1 suitable for the digestibility of severe patients

Developed a process for processing natural ingredients-based enteral feeding product

Conducted an assessment of the digestibility in vitro (pepsin, pH-stat and pH-drop

method)

Evaluated the protein digestibility of the product in animal models Swiss albino

Implemented a controlled clinical trial in the patients of the Department of Neurology, Cho Ray Hospital to test the effectiveness (nutritional status) and tolerance of the tube feeding food produced from natural ingredients

Taking together, these results showed very promising that we had enough ability and technology to develop a process in production of tube feeding product from local natural ingredients in the South in particular and in the country of Vietnam in general The widely producing of this product should be considered and implemented in nationwide It was also a reliable source for the further research in the same field of research into the nutrition medicines for patients
