Ideas? • The University and the Pistons’ G League team desire to establish a partnership with a Food Vendor/Dining/Catering Services operator who will provide quality concessions for the students, faculty, staff and fans that will attend games/events at the new arena • Vendor should be prepared to use industry best practices to maximize food quality, speed and quality of service, revenue opportunities, and regulatory compliance, and facilitate databased analysis • The focus and content of this RFP would be a food service partnership firmly for Wayne State’s new arena concession spaces only • These spaces are currently being designed to accommodate a vent-less system Would require vendor to build out the two white box concession areas that are available specifically for a food service Chase space is available for vent piping This venting is not provided by WSU Upgrade to vented system will require improved fire suppression • Two different locations on concourse for portables • Possible opportunity for catering for two or three club spaces Wayne state and G League will have their own designated club spaces • Donor suite will also be available for a food service opportunity (donor suite is separate from club spaces) The Donor Suite is located on the top level looking down over the arena • Looking for proposals to include possible expansion of hours and recommendations for new and/or adjusted service options and hours • Wayne State University is exploring the option of serving alcoholic beverages within the new arena and would prefer the vendor to hold the liquor license and assume responsibility for alcoholic beverage service • No commissary space is available WSU expects the food service spaces to be stocked on a “by event basis” An overhead door is available at the concourse level for building loading Concessions Space Information: • Two separate concession spaces 452 square feet each • Concession spaces will have basic HVAC supply to support “white box space” • Plumbing and Electrical infrastructure are stubbed at the “white box” concession space • Data is not provided Vendor is expected to secure own agreement with data provider and bring cable to concession space Empty conduit from property line to building is provided • WSU network is not available for vendor use Vendor will have to create own data closet • Donor suite on third level • Three separate club spaces, two on concourse level and one on floor level • Two areas with power on concourse level for portable concession stations Additional Information regarding the two concession spaces: • • • • • • • • • Sealed concrete floor White painted Gyp Walls Exposed Ceiling 18’-0” Overhead door + Man Door per concession ½” Chilled Water capped into room ½” Gas capped
