bar and completing this report I want to show what I did and learned in the bar I hope it is through this report that the reader are able to understand clearly about the activities and serving process at the bar Moreover, I hope that this internship report will be a useful document for the junior or students who are going to choose Sunset Beach Resort & Spa to practice in the future CONTENTS OF THE REPOT The content of the report is introduce structure of a resort and a bar, practicing process in the bar, the benefits and difficulties during months of probation This report also shows what the author learns after finishing the internship, and some suggestions for the resort PART I I : CONTENT 2.1 Over view Of Sunset Beach Resor t & Spa 2.1.1 Background I nformation Picture 1: Reception Area preferential treatments, promotions and games for visitors to experience new things when visiting to Phu Quoc Coming to Sunset Beach Resort & Spa, you will experience a new standard of luxury, 5-stars table or bench designed for dispensing beer or other alcoholic drinks They were originally chest high, and a bar, often brass, ran the length of the table, just above floor height, for customers to rest a foot on, which gave the table its name Over many years, heights of bars were lowered, and high stools added, and the brass bar remains today The name bar became identified with the business, (also known as a saloon or a tavern or sometimes as a pub or club, referring to the actual establishment, as in pub bar or club bar etc.) is a retail business establishment that serves alcoholic beverages, such as beer, wine, liquor, cocktails, and other beverages such as mineral water and soft drinks Bars often also sell snack foods such as crisps (also referred to as potato chips) or peanuts, for consumption on their premises Some types of bars, such as pubs, may also serve food from a restaurant menu The term "bar" also refers to the countertop and area where drinks are served The term "bar" derives from the metal or wooden bar (barrier) that is often located along the length of the "bar" Bars provide stools or chairs that are placed at tables or counters for their patrons Bars that offer entertainment or live music are often referred to as "music bars", "live venues", or "nightclubs" Types of bars range from inexpensive dive bars to elegant places of entertainment, often accompanying restaurants for dining Many bars operate a discount period, designated a "happy hour" or discount of the day to encourage off-peak-time patronage Bars that fill to capacity sometimes implement a cover charge or a minimum drink -purchase requirement during their peak hours Bars may have bouncers to ensure that patrons are of legal age, to eject drunk or belligerent patrons, and to collect cover charges Such bars often feature entertainment, which may be a live band, vocalist, comedian, or disc jockey playing recorded music Patrons may sit or stand at the counter and be served by the bartender Depending on the size of a bar and its approach, alcohol may be served at the bar by bartenders, at tables by servers, or by a combination of the two The "back bar" is a set of shelves of glasses and bottles behind the counter In some establishments, the back bar is elaborately decorated with woodwork, etched glass, mirrors, and lights 2.2.3 Bar (Counter) The counter at which drinks are served by a bartender is called "the bar" This term is applied, as a synecdoche, to drinking establishments called "bars" This counter typically stores a variety of beers, wines, liquors, and non-alcoholic ingredients, and is organized to facilitate the bartender's work Counters for serving other types of food and drink may also be called bars Examples of this usage of the word include snack bars, sushi bars, juice bars, salad bars, dairy bars, and ice cream sundae bars 2.3 I ntr oduce Sunset Beach Bar Picture 9: Logo of the Bar 2.3.1 Background information Sunset Beach Bar, located on the beach, right beside the outdoor swimming pool, is the most original signature of Sunset Beach Resort & Spa Opened in late 2016, Sunset Beach Bar has constantly been considered one of the best beach bars in Vietnam Picture 10& 11: Sunset Beach Bar in the old days (2016) In 2016, Sunset Beach Bar was a small family-model beach bar At the time, although small, the bar attracted a lot of tourists, especially foreign visitors As a result, after only years of operation, the owner decided to rebuild the bar more modern and establish Sunset Beach Resort & Spa Picture 12& 13: The modern Sunset Beach Bar Sunset Beach Bar has an ideal location for anyone who wants to experience the famous miraculous sunset The bar was voted one of the most beautiful sunset beaches in Phu Quoc for many years Sunset Beach Bar is currently ranked Top on TripAdvisor (the world's leading and reputable travel website) for evening entertainment services 2.3.2 Organizational chart of Bar Diagram 2: The organization of The Bar Bar M anager Super visor Captain Hostess Waiter / Waitr ess Bar tender Runner Cashier Role of each position: - Hostess: A hostess or host greets customers as they enter a restaurant, takes their reservations or puts them on a waiting list, gives them menus and shows them to their seats They may also handle phone calls and customer queries about the restaurant and menu, and assist various restaurant staff when necessary - Waiter / Waitr ess: Taking orders from customers, introducing guests to the dishes and drinks that the restaurant serves, or checking the food before handing it out to customers, cleaning up the dining table, change dining utensils for customers or willing to answer customers' questions and answers - Bar tender : Making and preparing drinks by request and serving customers at the bar - Runner : Helping to move food and drinks to customers - Cashier : Printing invoices and collecting service charges from customers 2.3.3 Operation Day In the daytime, the bar run as a restaurant, tourists can enjoy European-style dishes from professional chefs Instead of sitting at a restaurant with air-conditioned, we can order and enjoy foods the most beautiful places to the one who love taking photos especially catching sunset moments Picture 18& 19: The Author and the Sunset Night Sunset Beach Bar not only serves tourists delicious food and wonderful cocktails, the most modern sound system and the top DJs of Sunset Beach Bar will give you a vibrant atmosphere at night with trendy music Every Wednesday and Saturday, from 05:00 pm to 08:00 pm, diners will be immersed in romantic songs by Filipino band Picture 20& 21: Filipino band From 08:00 pm to 10:00 pm (everyday), customer will enjoy exciting music from top DJs in Phu Quoc Picture 22& 23 -up of Sunset Beach At 10:00, the audience will be enjoyed a special fire show only perform in Sunset Beach Bar The show often happens on Wednesday and Saturday every week Picture 24& 25: Fire show 2.3.4 Drinks menu Picture 26-34: Drinks menu 2.3.5 The Relationship between Bar and others Department - Restaur ant: Bar is the place supplies restaurant with drinks directly Whenever customers in the restaurant order drink, waiter (waitress) will inform the bar about ordering - K itchen: Because the bar operates as a restaurant, therefore bar and kitchen has an intimate relationship Kitchen is the place supplies foods for customers in the bar - M aintenance/ Engineer ing: This department will support or repair break equipment in the bar such as speakers, refrigerators, lights, air-conditioners or - Accounting Depar tment: is the department which decided order more bar instruments (napkin, grinder, order something, staff have to communicate to Accounting Department except fruit or ice (bar decide) 2.4 I nternship Activities: It was a simple day when I came to sunset beach bar at the first day, I were introduced to staffs in the bar and I were guided what I have to during internship time In the second day, I had to learn the menu by heart and the name of each area and the number of each table There are table areas (B, Q, T, and N) and table name will be given a name corresponds with The process of serving at the first month (night-shift, 5:00am 10:00pm) - Handing over the watch: to begin a new shift, I had to know some information about the previous customers For instance, waitress/waiter in the day shift will tell me which tables pay the bill already, which tables is not Moreover, they will tell me dinks or foods are going to be served - Cleaning the table (at the first shift) eanliness is next to godliness customer coming Keeping the table always clean is one of the action shows your respect to the customer - Giving the menu (if have customer): giving the menu to customers by the right hand, the left hand is put in your back - Ordering( by paper or by tab): By paper: writing foods or drinks on the paper and then giving it to the captain By tab: I was given a tab in which has available menu, whenever customers order drinks I need only click and choose the name of this drinks or foods - Put drinks into the table: after putting the glasses, bottles or cup of dri - Taking care of customers: during my shift, I had to observe each table to be present promptly whenever customer need - - Taking the bill from cashier: If the customer wants to pay the bill, I would go to the cashier and tell him/her the number of table and take the bill for customers Cleaning the table (after customers leaving): cleaning and tidy up the table after customer finishing their meal The last month (day shift, 9:00am 5:00pm) The last month at Sunset Beach Bar I had to many works I assumed both waitress and runner Because customers in the morning is quite empty (customer started to be crowded from 3:00 pm onward), therefore dayshift need less staff than nightshift (1 captain and waitress/ waiter) - - Cleaning all tables Putting mattress on the bench: I had to bring the mattress from the storage and put it into the bench Folding tissue and putting them in a bamboo jar Disposing tables and chair neatly Putting astray on the table Checking and adding eating utensils in service station Taking order: similar to the night-shift Setting up the eating utensils (if customer orders food): putting folks, chopsticks, spoons, bowl or some needed utensils into the table If the customer orders European foods, we have to set up folks and spoons And when they want Asian foods, we need to set up chopsticks and spoons Based on each kind of food, we will set up needed eating utensils Runner: taking drinks from the counter and foods from the kitchen Taking the bill Cleaning the table Some skills which I had learned when I worked as an intern: - Making coffee (grinding and brewing coffee) Blending smoothies Making fruit juice Printing the bill Ordering (food and beverage) by tab and computer Resolving customers complains 2.5 Useful experiences which I gained during the internship Working in a professional environment like Sunset Beach Bar gave me a lot of experiences I had an opportunity to know about many types of cocktails, beers, liquors, which I have never seen before and know about the ingredients in each kind of cocktails The Bar attracts a huge amount of foreigner tourists; therefore this is an ideal place to practice my English listening and speaking skill And I can learn eating and drinking cultures in different countries from customers Picture 35, 36, 37, and 38: Foreigner tourists A 2-month period of probation, I learned many things and made a lot of friends Staffs are very friendly and enthusiasm, they always help and clear up all my queries Therefore, I apprenticed them to a waitress rapidly The special thing I learned during probation process is problem solving skill, customers and how to dominate my passions I had to keep my smile and always stay friendly to the customer even though I feel annoy or uncomfortable PART I I I : BENEFI TS AND DI FFI CUL TI ES 3.1 Benefits which help me complete my practice time The staffs in the resort were extremely friendly and enthusiastic They always answered my entire question as well as helped me to solve situations which I could not handle The company supported us meals and accommodation; therefore I saved a lot of moneys in months I also received 1.500.000 VND and tips (each month) after finishing my internship Especially, my classmate and roommate helped me a lot during probation time They were willing to share works with me and helped me whenever I got trouble with the costomers 3.2 Difficulties The amount of work pretty much, I had to stay late at many nights and worked overtime continuously Therefore I was under pressure and it was affecting my health At the first week worked for Sunset Beach Bar, I made a lot of mistakes I or the menu There are many religious tourists (India, Afghanistan, and Russia eat some ingredients such as pork, beef or even cheese and they extremely fastidious Therefore, I had to learn about their culture or at least I must know English to understand them I work or 3.3 The reasons of problem and solutions: For the first disadvantages, the way I see it because my heath are not good, therefore, I have to take more exercise and learn to adapt to new environment After making a lot of mistakes, I tried my best to learn the menu also learn the ingredients of each dish About the third difficulty, my knowledge about the culture of each country still limited, therefore I should read more book or search information on the internet to understand the culture of each region to serve customers better PART I V: CONCL USI ON AND SUGGESTI ONS 4.1 Suggestions for Sunset Beach Bar The manager should know more about her subordinates and take interested in them The staff should be trained before working There are few of staffs not know English, therefore, Human Resources should check English ability before accepting them There are about 20 employees in the bar, but they separate in many small teams and not co-ordinate in working which influence on serving quality shortcoming For instance, the manager should open a meeting to ask for the should (even in front of customer) especially bartenders Bartenders should not be foul-mouthed or swear like a trooper 4.2 Suggestions for An Giang University To help student gain experiences and adapt to new environment easily, An Giang University and Faculty of Foreign Languages should equip students with knowledge and information about practice places or companies Besides, to students who are going to practice in hospitality industry, the University and Faculty should train some skills for them before taking an internship PART V: CONCL USI ON It was a really good time to practice in Sunset Beach Bar which I probably will not forget I were learned many skills that I have never done before To me, two months period is a time long enough to acquire many experiences s a great time for me, as an intern, in order to use what I have learn at school into realities a resort and bar, giving information about business activities and process of serving and giving a general outline of work of a bar Then, put forth some comments, judgments about the result of probation process I would like to thank Sunset Beach Resort & Spa, Sunset Beach Bar because of giving me an opportunity to practice here Besides, I want to say thanks to my instructor to help me complete this report This
