Before the mid-nineteenth century, people in the United States ate most foods only in season Drying, smoking,
and salting could preserve meat for a short time , but the availability of fresh meat , like that of fresh milk, was very
limited, there was no way to prevent spoilage But in 1810 a French inventor named Nicolas Appert developed the
cooking and sealing process of canning And in the 1850s an American named Gail Borden developed a means of condensing and preserving milk Canned goods and condensed milk became more common during the 1860’s, but supplies remained low because cans had to be made by hand By 1880, however, inventors had fashioned stamping and soldering machines that mass-produced cans from tinplate Suddenly all kinds of food could be preserved and bought at all times of the year
Other trends and inventions had also helped make it possible for American to vary their daily diets Growing urban populations created demand that encouraged fruit and vegetable farmers to raise more produce Railroad refrigerator
cars enabled growers and meat packers to ship perishables great distances and to preserve them for longer periods
Thus, by the 1890’s, northern city dwellers could enjoy southern and western strawberries, grapes, and tomatoes, previously available for a month at most , for up to six months of the year In addition, increased use of iceboxes enabled families to store perishables An easy means of producing ice commercially had been invented in the 1870’s, and by 1900 the nation had more than two thousand commercial ice plants, most of which made home deliveries The
icebox became a fixture in most homes and remained so until the mechanized refrigerator replaced it in the 1920’s
and 1930’s
Almost everyone now had a more diversified diet Some people continued to eat mainly foods that were heavy in starches or carbohydrates, and not everyone could afford meat Nevertheless, many families could take advantage of previously unavailable fruits, vegetables, and dairy products to achieve more varied fare

Human memory, formerly believed to be rather inefficient, is really much more sophisticated than that of a
computer Researchers approaching the problem from a variety of points of view have all concluded that there is a great deal more stored in our minds than has been generally supposed Dr Wilder Penfield, a Canadian
neurosurgeon, proved that by stimulating their brain electrically, he could elicit the total recall of complex events in his
objects’ lives Even dreams and other minor events supposedly forgotten for many years suddenly emerged in detail The memory trace is the term for whatever forms the international representation of the specific information about the event stored in the memory Assumed to have been made by structural changes in the brain, the memory trace is not subject to direct observation but is rather a theoretical construct that is used to speculate about how information presented at a particular time can cause performance at a later time Most theories include the strength of the memory trace as a variable in the degrees of learning, retention, and retrieval possible for a memory One theory is that the fantastic capacity for storage in the brain is the result of an almost unlimited combination of interconnections between brain cells, stimulated by patterns of activity Repeated references to the same information support recall Or, to say
that another way, improved performance is the result of strengthening the chemical bonds in the memory
52 With what topic is the passage mainly concerned?
53 The word “formerly” in the paragraph 1 could be best replaced by “ ”
54 The word “that” in the paragraph 1 refers to

58 How did Penfield stimulate dreams and other minor events from the past?
59 The word “bonds” in the last sentence of the passage means “ ”
60 According to the passage, the capacity for the storage in the brain _
a has a limited combination of relationships
b is not influenced by repetition
Trang 5d is stimulated by patterns of activity
61 All of the following are true of a memory trace EXCEPT that
a it is probably made by structural changes in the brain
b it is related to the degree of recall supported by repetition
c it is able to be observed directly by investigators
d it is theoretical construct that we use to form hypotheses

The role of translation enabling literature to pass beyond its natural frontiers is receiving growing recognition In view of the general increase in this (62) , it is not surprising that many people with literary interests and
a knowledge of languages should think of adopting translating as a full- or- part- time (63) Some advice may usefully be given to such would- be- translators
The first difficulty the beginner will (64) is the unwillingness of publishers to entrust a translator to anyone who has not already (65) a reputation for sound work The least publishers will (66) _ before commissioning a translator is a fairly lengthy (67) of the applicant’s work, even if unpublished Perhaps the best way the would-be translator can begin is to select some book of the type which he or she feels competent and eager to translate, translate a (68) _ section of the book and then submit the book and the translation to a suitable publisher If he or she is extremely lucky, this may result in a commission to translate the book More probably, however, publishers will (69) _ the book as such but if they are favourably (70) by the translation, they may very possibly commission some other books of a (71) nature which they already have in mind
