damselfly Scientific name: Ischnura heterosticta S Getty een mostly in summer and even in winter in northern parts, the common bluetail damselfly, Ischnura heterosticta, is found throughout Australia With their excellent vision, toothed jaws and superb flying skills, these fiercely beautiful predators may resemble tiny brilliant-blue jet fighters, yet they belong to an ancient and very successful order, Odonata, which according to fossil records has changed little in 300 million years Damselflies can be distinguished from dragonflies by their widely separated eyes, their more delicate, needlelike abdomens and the way they hold their wings when at rest, folded along the body rather than horizontally spread Never far from water and consuming large quantities of mosquitoes, midges and 0.4 0.2 GARDEN TO TABLE | CARROT Best Ever C a r ro t C a ke Serves • tsp ground cardamom • 120g roasted hazelnuts, chopped INGREDIENTS eggs ẵ cup (125g) coconut sugar • tsp vanilla powder or natural vanilla extract • 250mL ghee or olive oil • carrots, grated • medjool dates, stones removed, flesh finely chopped • cups (250g) gluten-free flour (I use a brown rice and arrowroot combination) ẵ cup (125g) almond meal tsp baking powder • tsp bicarbonate of soda • tsp ground cinnamon Icing • 125g ghee, softened • 250g cream cheese, softened & chopped • tbsp pure maple syrup METHOD Preheat the oven to 180°C Grease and line a 22cm springform cake tin with baking paper Place the eggs and sugar in a large bowl and beat until pale and thick Add the vanilla and oil and beat until combined Fold in the carrot, dates, flour, almond meal, baking powder, bicarbonate of soda, spices and nuts Spoon into the prepared tin and smooth the top Bake for 50–55 minutes, until a skewer inserted in the centre comes out clean Set aside to cool in the tin To make the icing, beat the ghee, cream cheese and maple syrup until light and creamy Using a serrated knife, cut the cake in half crossways to create two layers. Spread the top of one layer with half of the icing Top with the other layer and finish with the remaining icing Decorate as desired and serve Good Organic Gardening | 85 REVIEWS | BOOKS COVER
