necessary information for efficient use of the appliance, even when they not have a specific knowledge in the field Please follow the instructions contained herein carefully, especially as for safety regulations and ordinary maintenance are concerned 0.2 S GE F HE M N The manual must always accompany the appliance it refers to Keep it in a dry, cool, safe and easily accessible place so as to be able to consult it whenever necessary Any updates sent to customers must be attached to this manual In case you lose the manual, please ask the manufacturer or the local distributor for further guaranteed for 12 months from the date of purchase and the seller’s warranty applies to all EEC Member States In order to receive warranty assistance, customers must provide the Seller with the original sales document (receipt, invoice or delivery note), attesting to the date of purchase and the appliance serial number appearing on the CE compliance certificate and on the identification plate Please keep the original packing of the appliance for a minimum of days from the date of purchase Should any component be found to be defective during the warranty period due to the material or the manufacturing process, the Seller will replace it free of charge at its own discretion If the product is off-warranty, the Seller will repair it at the customer’s cost The warranty does not cover appliances are equipped with safety and alarm devices, such as: The green pilot light (A) indicates that the relative heating area is turned on The green pilot light (A) indicates that the timer and the power selector are turned on The red LED indicates that the "Machine is connected", while the digits on the display indicate that the appliance is turned on and the time or cooking programme settings 2.2 PER N EC E EQUIPME When using or performing maintenance operations on the Salamanders use the following protective devices: • Clothing: Users must wear apparel complying with the essential safety requirements in force Wear non-slip shoes on slippery flooring and keep your hair under a cap • Gloves: Use protective gloves when working in high-temperature areas 2.3 S FE Y SYM Staff must pay attention to the following safety symbols: • This symbol on a component warns the user that there are electrical terminals behind it Only specialized staff is allowed to disassemble it 2.4 O HER P I I NS (D GER US PR C ICES • Never obstruct the vent holes in the appliance • Do not use the appliance at maximum power for a prolonged period of time, unless necessary, in order to save energy and to avoid overloading the appliance • • Do not clean the appliance with combustible liquids While cooking with fat or oil, pay the utmost attention as these substances can catch fire when used for cooking may cause coverings to overheat, regardless of the appliance This is not due to faulty manufacturing, but rather to the fact that stainless steel is a thermal conductor; therefore pay public, the appliances must be properly installed and maintained, in compliance with the national and local regulations, paying particular attention to ensuring compliance with the following: • • • • 1.2 fire safety regulations; regulations concerning environmental conditions and the generation of steam and hot water for sanitary use; installation regulations for cooking appliances for professional catering; regulations for specific public premises (hospitals, shops, etc) E IR NME NDI NS T The appliance must be used in premises with max 75% non-saline humidity at a temperature between +5°C (41°F) and +35°C (95°F), in order to prevent malfunctioning L Adequate lighting is required for safe use of the appliance F Install the appliance in a well ventilated place (preferably under a suction hood) in compliance with the regulations in force G 1.3 APP I NCE P SI I N NG Place the appliance in the site where it will be used Leave at least 50mm between the appliance and the wall for access and ventilation In case you want to install the Salamander on the wall, use the special wall-mounting shelf nailed to the wall by means of screws and metal dowels suitable for the type of wall and the weight of the appliance The app iance is n t suita e f r bu t in insta ati n 1.4 INS L I N SI E REQUIREMEN S The installation area must be sufficiently large, well levelled, dry, smooth, robust, steady and at least 80cm from the ground If the appliance is positioned near a wall, dividing walls, kitchen cabinets or flammable decorative covering materials, cover them with suitable fire-retardant and heat insulating materials, and follow the fire prevention regulations For the positioning of the appliance refer to the structural dimensions in the Technical Features charts 1.5 P SSI EDS R NCES/IN ERFERENCES If the appliance is installed against flammable materials (wood or similar) or heat-sensitive materials (plasterboard or similar), apply a protective covering that insulates them from radiation heat The presence of other electrical appliances may result in malfunctioning; check for power line disturbance 2.0 C NNEC I N WER SUP The appliance is not equipped with a cable, therefore it is necessary to install a cable that is suitable for the power draw and plug it to the junction box by means of a proper plug To connect the cable, plug it in the socket TH regu at n FOR THE VOLTAGE AVAILABLE IN THE SITE OF USE G 2.1 CHECKS Before connecting the appliance to the electrical power supply, perform the following checks: • • • • • • • • 2.2 The voltage of the power supply grid must be the same as the one indicated on the CE identification plate; The power supply system must be suitable for the maximum power of the appliance as indicated on the appliance nameplate and in the "Technical features” chart in this manual Check that the section of the supply line is suitable for the starting and running load The appliance must be connected to an earthing system that complies with the characteristics defined by the CEI 64-8 regulations; At the moment of installation, an efficient circuit breaker with adequate interruption power must be mounted upstream of the appliance Magnetic circuit breakers can be used for the purpose The circuit breaker must be easily accessible and placed near the appliance Use an integrated magnetic circuit breaker with fuses; The cable of the appliance must not be exposed to a source of direct heat EQUIP EN I NEC I In case the appliance is installed on the wall or on a steel base, it must be connected to an heating plate is made up of or radiant elements, depending on the model 1.1 SIC” VERSI Temperature is adjusted by means of a multi-position knob Switch the knob (K) to start heating any area; the off Power supply: 33% energy Power supply: 66% energy Power supply: 100% energy G 1.2 “H L GEN” VERSI The salamander is set by means of a timer (T) and a power control knob (K) The timer can be set to a maximum of 15' for cooking or in the position, which can be substituted by the plate detection function The knob (K) can activate either the whole heating area, or just the central one, while the third position holds the food at a low temperature 1.3 “T UCH” VERS The salamander is controlled by an electric control system that sets the cooking time, the cooking area and the hold mode temperature TI E P / % E TER ST RT ON STOP OFF OLD PR0G FU In particular: ON/OFF button = switches the salamander on/off START/STOP button = starts and stops the operation session (cooking/hold) HOLD button = activates the hold function button = to select the whole cooking area or just the central part PROG button = to set one cooking programme (from P1 to P9) or none TIME click wheel = to change the cooking time Move the button clockwise for a longer cooking time (15’ max), or anti-clockwise for a shorter one TEMP click wheel = change the energy percentage used the ho cycle LCD display = to visualize: a cooking time; b energy percentage used in hold mode; c active cooking area, d active cooking programme 1.4 “T UCH” VERS N FU C NING SWITCH ON: A red LED light is turned on when the machine is connected to the power supply The display is turned off Push the ON-OFF button to switch the appliance on The LED light will turn off while the LCD monitor will display the time settings of the last cooking session It will also display how many lights are on through or horizontal lines (for ex SEHP400 or just the right light or both; SEHP600 or just the central light or all three; SEHP700 or just the central lights or all four) STARTING THE COOKING SESSION Pushing the START-STOP button starts the cooking session The lights are turned on (all/just the central one as explained above) for the set period of time or the one set during the last cooking session The timer countdown begins and the user can see the time left A short acoustic signal indicates that the countdown is over and the lights are switched off In case the hold mode had been previously activated, the appliance will stay on HOLD mode for maximum 15’ (an energy value over 00% is necessary to activate the hold mode) The user can interrupt both the cooking session and the hold mode at any time by pushing the START/STOP button The TIME click wheel allows the user to set the cooking time by rotating it clockwise for a longer cooking or hold time and anti-clockwise for shorter time (even though the cooking session has already begun) HOLD: The same procedure used to set the cooking time will allow the user to change the energy percentage required by the hold session, by pressing the HOLD button and moving the left click wheel TEMP In order to use only the HOLD function the user should press the HOLD button, changing the energy settings with the TEMP click wheel and pushing START/STOP to start the operation session For maximum performance, lift the Heating plate completely before setting the Hold mode You will prevent energy waste and the risk of overcooking or drying food SETTING: The Touch version allows you to set of the most frequently used cooking sessions The memorized cooking programmes will be indicated on the display by the initials P1, P2, P3 up to P9 In case the user has already programmed the appliance, it can start from a pre-set cooking session Push the PROG button to choose the programme number which will appear on the display Once you have chosen it, press START/STOP to start the cooking session or the hold mode In case you wish to set or change the cooking programmes, switch on the appliance and follow the instructions below: a press the PROG Button; b press or change the cooking time by using the TIME clickwheel; c choose the heating area by means of the button used to choose the heating lights; d press the HOLD button (only to switch the appliance from cooking to hold mode) and set the required energy percentage (by selecting 00% the HOLD mode is off) and press the PROG button for more than 3'' In case you want to set the cooking mode only, without Hold, just skip point d Push START/STOP to start from the set programme and the cooking session RC NI G HE AP I NCE Daily cleaning will keep the appliance in perfect condition and improve its life cycle Main causes for stainless steel deterioration or corrosion: • The use of acid or abrasive detergents, especially chlorine based products, such as hydrochloric acid or sodium hypochlorite (bleach) Before purchasing a detergent, please make sure it will not corrode steel (see also “Routine cleaning” below); • stagnation of residual iron, such as: rust melted in water going through pipes, especially after a period of inactivity; • stagnation of acid components, such as vinegar, lemon juice, sauces, salt, etc Evaporation of saline solutions causes great damage to all surfaces Avoid using wire wool to remove food stains, choose instead stainless steel wool or a steel spatula or – even better – softer materials, making sure they are not made of iron; Cooking surfaces must not be cleaned with water jets or with detergents sprayed at high pressure The external covering should be cleaned with a soap and water solution or with unabrasive and non-acid detergents and using a damp cloth The floor near the appliance should also be cleaned with unabrasive and non-acid detergents; In case the appliance is very dirty, use a synthetic sponge, like Scotch Brite TM Rinse with water and dry with a clean cloth To avoid corrosion, completely remove all salt residues on internal and external walls 8 2.0 INS ND A SI NS N S IN ESS S EEL Do not use any iron object on the appliance surface Scratches and heat scorching can be smoothened or removed by using stainless steel wool or abrasive synthetic sponges in the direction of the grain 2.0 UST To eliminate rust contact industrial detergent manufacturers in order to find the appropriate product or use products for limescale removal After rinsing, it may be necessary to use an alkaline detergent to neutralise acid compounds residues on the appliance surface 2.1 C NING F S N ESS S EE MP NEN Switch off the appliance and disconnect from the power supply 4 Let the appliance cool down to room temperature; Spray a degreaser on the appliance walls following the instructions and warnings on the degreaser label Use rubber gloves in order to avoid contact with eyes and skin; Leave the product on for approximately 5-10 minutes; Rinse with plenty of water and repeat the procedure if necessary; Dry carefully with a soft
