Wear gloves Apply cleaning agent carefully! Position Name Safety symbol Alert level text Function Visual representation of the danger with safety symbols according to BGV A8 Classification of danger Type of danger and consequences and / or measures 1.1.1 Meaning of alert levels The alert level shows the severity and probability of injury and is subdivided into four categories: Danger Indicates an exceptionally dangerous situation where non-compliance can lead to death or severe (irreversible) injuries This symbol is limited to extreme situations Warning Indicates a potentially dangerous situation where non-compliance can lead to death or severe (irreversible) injuries Caution Indicates a dangerous situation where non-compliance can lead to less severe (reversible) injuries Caution without safety symbol Warns against material damage or improper usage Operating Manual EBO Page 1.2 General symbols The following symbols are also used in the operating manual: Information Indicates particular information and tips Drinking water Use drinking water (according to drinking water ordinance) 1.3 Abbreviations The following abbreviations are also used in the operating manual: EBO = deck oven 1.4 Warranty For warranty conditions, please refer to the General Terms of Business In order to be able to process a warranty claim as quickly as possible, proceed as follows: Inform us of the exact name of the oven => You will find the oven name on the type plate (attached to the top right of the reverse of the oven) Inform us of the serial number of the oven => You will also find the serial name on the type plate Please inform us of your complaint Please clean the oven before the warranty case is resolved Safety instructions 2.1 General The essential safety instructions are summarized in this chapter This chapter must be read and understood by all persons who come into contact with the EBO The following safety instructions must be understood as a supplement to the pre-existing applicable national accident prevention guidelines and laws Existing accident prevention guidelines and laws must be adhered to in any case All appliances must always be assembled while complying with the current safety regulations applicable on location Operating Manual EBO Page 2.1.1 Obligation of the customer The customer is obliged only to allow persons to work with the deck oven who are acquainted with the fundamental instructions regarding work safety and accident prevention and who are instructed in handling the deck oven Persons must be at least 16 years of age Persons under 18 years may only work with the deck oven under supervision 2.1.2 Obligation of the staff All persons working with the deck oven are obligated to the following prior to starting work: to have completely read and understood the operating manual The persons confirm this by their signature 2.2 Intended use The deck oven EBO is exclusively suited for baking and roasting conventional bakeable goods and roast foods Any other usage extending beyond this is not regarded as intended usage WIESHEU GmbH is not liable for damages resulting from such unintended use DANGER Never heat alcoholic or combustible goods in the deck oven! Danger of fire! No alcoholic or combustible goods in the oven! DANGER Never heat explosive goods in the deck oven! Danger of explosion! No explosive goods in the oven! Protect all electrical assemblies against moisture and dust! Contact with electrics! Do not use the deck oven in moist or humid conditions Do not subject the deck oven to rain Protect all electrical DANGER assemblies against moisture and dust! WARNING Do not store items or foreign objects in, on or near the deck oven Danger of fire! No foreign objects in, on or near the oven! Operating Manual EBO Page CAUTION Technical damage! If there are any damages, pull out the mains plug! Only use the deck oven in technically perfect condition Check the deck oven for any damage before all work (cleaning, servicing, filling, etc.) All components must be correctly mounted and meet all all conditions to ensure perfect operation of the deck oven If damages are identified, pull out the mains plug, mark the damage clearly and set up a notice „Defective oven - not switch on!“ Have the damage repaired professionally Servicing and maintenance work may only be carried out by experts commissioned by WIESHEU GmbH under adherence of all safety precautions All safety covers must be assembled and re-assembled after each session of servicing and maintenance work Safety limit switches must not be bypassed No changes, attachments or conversions may be undertaken without authorisation from the manufacturer The deck oven must be checked once a year by a competent person to ensure work safety The customer must arrange the inspection In order to implement safety inspections regularly, we recommend you agree a service contract which will be carried out by WIESHEU GmbH service partners 2.3 Liability The customer and operating personnel are obliged to observe the instructions in the operating manual The general and regional accident prevention guidelines from the responsible trade associations must be complied with WIESHEU GmbH assumes no liability for damage which occurs as a result of wrong or negligent operation, baking or roasting with wrong operating parameters, servicing or maintenance or non-intended use This also applies to changes, attachments and conversions to the deck oven Any factory guarantee will thus becomes null and void Only use spare parts approved by the manufacturer WIESHEU GmbH assumes no liability for damage which results from non-approved spare parts 2.4 Dangers of injury / residual risks This deck oven has been designed by the manufacturer according to the latest standard of technology All deck ovens that leave the factory have been subjected to thorough testing Nevertheless, if the oven is used improperly, dangers can arise that cause danger to life and limb of the user or a third party or that impair the condition of the deck oven or other tangible assets Operating Manual EBO Page 2.4.1 Crush and impact dangers WARNING Lift the deck oven carefully during transport! Crushing and impact danger! Transport the oven carefully! WARNING Do not stand under or reach under raised, suspended loads! Crushing and impact danger! Do not step under suspended loads! The deck oven must stand on a horizontal, secure, nontilting base which can withstand the weight of the oven 2.4.2 Danger of fire CAUTION To prevent heat accumulation, place the deck oven at least 20 mm away from the wall Heat accumulation! Exhaust point and air vents must not be covered! The air vents on the sides and on the back must not be covered WARNING There is a danger of fire if the deck oven overloads electrically The electrical fuse protection of the plug socket must be ensured Danger of fire! Elect overload The fuse protection of the plug socket must be ensured! WARNING Danger of fire! Do not attach any foil, paper or stickers to the oven! Do not attach foil, paper, stickers etc to the deck oven Remove all protective sheeting from the oven before initial commissioning Operating Manual EBO Page 2.4.3 Danger from contact with electrics Connection of electrics and any work on the deck oven‘s electrical equipment may only be carried out by an electrician trained for this particular product according to Contact with electrics! electrical industry regulations CAUTION Danger to life from electric shock! Before any work on the electrical equipment, turn the main switch off and remove the mains plug After pulling out the mains plug, the electrical components still carry voltage Before work and before switching on again, wait at least minutes until all components have completely discharged The mains plug must also be accessible after installation of the deck oven in order to guarantee quick disconnection from the mains at all times If this is not possible, then a device (main switch) must be attached to facilitate disconnection from the mains Protect all electrical assemblies against wet, moisture and dust Important functions, e.g safety circuits can fail Contact with electrics! and lead to persons being harmed and appliance parts being damaged Protect all electrical DANGER assemblies against moisture and dust! 2.4.4 Danger on removal of foods The water supply for the deck oven must be of drinking water quality (according to drinking water ordinance) and may not be above 50 °C Different filters and a water treatment unit can be integrated into the circuit to improve water quality WARNING Hygiene! Maintain and clean the oven with great care! Maintain and clean the deck oven with great care Hygienically perfect products can only be prepared with a clean deck oven 2.4.5 Water damage The water tap installed by the customer near the oven may only be turned on if the deck oven is running and must be closed again afterwards The flow pressure of Water damage! the water may not exceed the pressure stated on the Shut off the water supsafety sticker If necessary, a pressure regulator must be ply after operation of installed by the customer oven! Hot steam exits through the exhaust connection on the reverse of the oven Adjust the deck oven in such a way that no personal injury or material damage can occur as a result of exiting steam Lock off the customer water supply immediately if the solenoid valve is defective or if the steam valve is permanently interconnected Any other operation is prohibited, as there is a danger of burns from hot steam Do not rectify damage yourself, instead get in touch with a WIESHEU GmbH service partner DANGER Danger of burns! Do not place any liquids above eye level in the oven! WARNING Danger of burns! Put on gloves and open the oven door carefully! WARNING Danger of burns! Put on gloves Remove or load trays carefully! In order prevent scalding from heated liquids, not push any container with liquid or with a food that liquifies on heating into the deck oven above eye level In spite of safety technology, hot steam and heat exits on opening the oven door The frame and glass of the oven door get hot Put on heat resistant gloves and open the oven door carefully The inside of the oven is hot There is a danger of burns from the hot surfaces! Use heat resistant gloves or pot-holders for loading and removing baked products Proceed very carefully during work and avoid touching the hot surfaces Only push the loaded trays in if the hanging racks have been correctly Allow the deck oven to cool down before any servicing work and cleaning Operating Manual EBO Page 10 4.6 Exhaust connection WARNING Danger of burns! Caution with hot oven, there is hot steam! The exhaust air occurring during the baking or roasting process escapes through the exhaust connection on the deck oven The following points must be observed when connecting the exhaust In order to avoid malfunctions on the oven, the exhaust air must be directed up away from the rear area of the oven The exhaust air should not come close to the area of the side air vents! If more than one oven is used at the same time the exhaust pipe must not be connected to each other for reasons of baking quality The exhaust steam from each oven must be individually conducted upwards The diameter of the exhaust pipe must be 50 or 80 mm With the 50 mm dimension, the maximum pipe length of the steam line should not exceed m With the 80 mm dimension, the maximum pipe length of the steam line should not exceed m It must be ensured that the exhaust air can be vented without any obstruction (no narrowing of the cross section) The exhaust pipes must be heat resistant (up to 180 °C), steam, corrosion, acid and alkaline resistant and able to withstand a pressure of 10 mbar In order for the condensate water to drain off, the exhaust line must be laid with a rising incline (not horizontally) If exhaust air is vented to the outside at the customer‘s premises, or if it is directed into an available conduit, then a flexible hose (not included in the scope of delivery) must be used When using an exhaust fan it has to be ensured that the deck oven experiences no overpressure 4.7 Boiler overflow Deck ovens with a steaming system have a boiler overflow on the rear of the unit The escaping water has to be fed into a syphon No plastic components are to be used to carry out this process, because the overflowing water is approx.100°C or steam can escape Operating Manual EBO Page 22 Commissioning Each time the deck oven is used, the customer assumes full responsibility for the safety of any persons nearby Before commissioning, the user must • have read and understood the operating manual (in particular the chapter on safety instructions) • meet the correct measures in an emergency and be able to switch off and secure the deck oven CAUTION Contact with electrics! Danger to life from electric shock! WARNING Danger of fire! Do not attach any foil, paper or stickers to the oven! WARNING Protect all electrical assemblies against moisture and dust! Do not use the deck oven in moist or humid conditions Do not subject the deck oven to rain Do not attach foil, paper, stickers etc to the deck oven! Before initial commissioning, remove all protective sheeting from the deck oven Do not store items or foreign objects in, on or near the deck oven! Danger of fire! No foreign objects in, on or near the oven! DANGER Never heat alcoholic or combustible goods in the deck oven! Danger of fire! No alcoholic or combustible goods in the oven! DANGER Never heat explosive goods in the deck oven! Danger of explosion! No explosive goods in the oven! Operating Manual EBO Page 23 5.1 Initial start-up The slabs have to be baked slowly prior to initial start-up The water escapes from the stone floors and the fat evaporates from the insulation CAUTION Technical damage! Slowly heat slabs prior to initial start up! Do not rapidly increase the temperature, because otherwise the slabs could become warped Follow the following baking parameters when baking in the EBO: Parameter Top heat Bottom heat Baking time Steam Exhaust air valve Step 50°C 50°C 45 minutes none open Step 100°C 100°C 45 minutes none open Step 150°C 150°C 45 minutes none open Step 200°C 200°C 45 minutes none open Step 250°C 250°C 45 minutes none open The deck oven is equipped with a safety thermostat This switches the deck oven off if the oven electrically overloads If the temperature inside the baking chamber is less than -8 °C you will not be able to turn the deck oven on Ensure that when the ambient temperatures are lower than °C the inside of the oven is heated to room temperature before starting Never heat or warm up live creatures! 5.2 Inspection work Carry out the following steps before operating the deck oven: • • • • Check the deck oven for any visible defects Check the oven door for tightness Check whether the necessary power supply is available Check whether the tap is opened and the dirt filter on the water inlet is clean Operating Manual EBO Page 24 Operation 6.1 Opening the oven door WARNING Danger of burns! Put on gloves and open the oven door carefully! In spite of safety technology, hot steam and heat exits on opening the oven door The frame and glass of the oven door get hot Put on heat resistant gloves and open the oven door carefully Caution, the door has no pre-engaged setting Danger of burns! Steam and heat are emitted ! • Press down the door lever • First open the door slightly • Let hot steam escape • Open the door completely Operating Manual EBO Page 25 6.2 Placing bakeable goods into the oven • Open the oven door • Place the bakeable goods on the trays • Push the trays into the baking chamber • Close the oven door DANGER Danger of burns! Do not place any liquids above eye level in the oven! WARNING Danger of burns! Put on gloves Remove or load trays carefully! In order prevent scalding from heated liquids, not push any container with liquid or with a food that liquifies on heating into the deck oven above eye level It is hot inside the deck oven; there is a risk of burns from the hot surfaces Use heat resistant gloves or pot-holders when loading and removing bakeable goods Proceed very carefully during work and avoid touching the hot surfaces 6.3 Closing the oven door • Slowly press down the door lever upwards => The door closes => Make sure there are no foreign objects between the glass panel and the oven door seal 6.4 Setting the baking parameters WIESHEU GmbH assumes no liability for damage occurring as a result of incorrectly set baking parameters Baking parameters are set using the operating controls You will find a description of the operating controls in the separate operating manual for the control system 6.5 Removing bakeable goods from the oven WARNING Danger of burns! Put on gloves Remove or load trays carefully! It is hot inside the deck oven; there is a risk of burns from the hot surfaces Use heat resistant gloves or pot-holders when loading and removing bakeable goods Proceed very carefully during work and avoid touching the hot surfaces Once the baking time is finished, remove the baked goods from the oven in three stages: • Open the oven door • Remove the bakery produces from the deck oven • Close the oven door Operating Manual EBO Page 26 Cleaning This chapter gives information on cleaning the deck oven CAUTION Contact with electrics! Danger to life from electric shock! WARNING Danger of burns! Hot surfaces! WARNING Hygiene! Maintain and clean the oven with great care! Before cleaning, switch off the deck oven and disconnect from the mains Danger of burns from hot surfaces! Leave the oven cool down before cleaning! Maintain and clean the deck oven with great care Hygienically perfect products can only be prepared with a clean deck oven There is a risk of germs forming if used for longer periods under 100 °C 7.1 General cleaning work CAUTION Technical damage! Clean the oven with a damp, soft cloth! Clean the external surfaces and operating controls with a soft, damp cloth Do not use running water or an abrasive cleaning cloth Do not clean the operating controls with oven cleaner • To clean the inside of the oven, not use any cleaning agents which contain ammonia, chlorine, potassium, hydrocarbon or sodium hydroxide • Do not use any scouring or scratchy objects or cleaning agents or objects • Do not clean the deck oven with acid or expose it to acid vapours • Pay attention to the manufacturer‘s instructions on the cleaning agent • Clean the door seal with water and mild soapsuds Operating Manual EBO Page 27 7.2 Cleaning the inside of the oven 7.2.1 Cleaning agents To clean the inside of the oven, use the cleaning agents recommended by the manufacturer WARNING Note the safety instructions on the cleaning agents! Danger of injury! Note the safety instructions on the cleaning agents! CAUTION Damage to the oven chamber! Remove salt & alkaline solution remains daily Remove salt & aggressive alkaline solution residues from inside the oven daily These residues damage the oven chamber Remove loose impurities with a natural bristle brush and vacuum inaccessible areas using a hand-held vacuum cleaner If baked-on remains cannot be removed any other way, remove them with a wooden spatula Do not use any abrasive or scouring cleaning agents Always keep your cleaning cloths and brushes sterile Wiesheu - stainless steel cleaner and polish For cleaning and polishing stainless steel surfaces on the deck oven Bottle size: kg plastic bottle - with spray head Order No.: 56010 - without spray head Order No.: 56011 7.2.2 Cleaning the baking chamber CAUTION Contact with electrics! Danger to life from electric shock! CAUTION Technical damage! Clean the slabs when cold! Before cleaning, switch off the deck oven and disconnect from the mains Allow the slabs to cool down before any carrying out any cleaning Do not cool down the slabs manually with cold water, as the slabs may become damaged or break We recommend cleaning the baking chamber daily We recommend cleaning underneath the slabs in the baking chamber weekly Operating Manual EBO Page 28 Cleaning under the slabs in the baking chamber A A • Lift up the slab with the help of two screwdrivers => Put the screwdriver under the metal guide (A) to the right and the left next to the slab • Remove the slab from the inside of the oven • Put the slab in a suitable place • Use a hand-held vacuum cleaner to carefully remove any loose impurities from underneath the heating coils • Check that the spacer blocks are correctly positioned between the heating coils (on the EBO 124/128) • When installing the slab, pay attention that it does not tilt 7.2.3 Cleaning the oven controls CAUTION Technical damage! Clean the oven with a damp, soft cloth! Clean the external surfaces and operating controls with a soft, damp cloth Do not use running water or an abrasive cleaning cloth Do not clean the operating controls with oven cleaner • Wipe the operating element of the oven control unit with a damp leather cloth Operating Manual EBO Page 29 7.2.4 Cleaning the glass panel CAUTION Technical damage! Clean the glass panel when cold! Allow the glass panel to cool down before carrying out any cleaning Do not cool down the glass panel manually with cold water, as the glass panel could receive stress cracks and break • Clean the glass panel of your oven with water and commercially available glass cleaners • Do not use any scouring or scratchy objects or cleaning agents when doing this Pay attention to potential damage when cleaning the glass panels => an oven with damage to the panels should not be put into operation If a glass panel explodes during the operation, then the bakery and roasting products in the baking chamber should under no circumstances be consumed or sold Dispose of the bakery and roasting products immediately in case of hazards due to glass splinters Removing the glass panel A B C • Open the oven door • Unscrew both knurled screws (C) from their mountings => There are two washers (A) (B) behind the knurled screws • Put the knurled screws and washers in a suitable place • Secure the panel against falling down • Diagonally remove the glass panel from the baking chamber • Put the glass panel in a suitable place • Clean the glass panel as described • Attach both washers to the knurled screw (C) => First attach the metal screw (B) and then the plastic screw (A) • Diagonally insert the glass panel into the baking chamber • Position the glass panel in front of the mountings • Secure the glass panel with the knurled screws • Manually tighten the knurled screws => Do not use any tools Operating Manual EBO Page 30 7.3 Descaling The steam system and steam pipe must be descaled regularly The higher the water hardness of the drinking water, the more frequently you should descale Overall hardness (Total of potash ions) up to 3° dH from 4° dH from 7° dH from 14° dH from 21° dH Hardness range 1 Evaluation of water very soft soft medium hard hard very hard A water softening installation has to be installed upstream in order to prevent scaling For more information read chapter on „Water Connection“ Descaling is to be carried out by an authorised Wiesheu service partner only Faults, causes and remedies Note the safety instructions! Allow the deck oven to cool down before carrying out any work DANGER Contact with electrics! Danger to life from electric shock! Allow the deck oven to cool down before any work DANGER Contact with electrics! Danger to life from electric shock! Before any work on the electrical equipment, turn the main switch to „OFF“ and remove the mains plug Wait at least minutes until all components have completely discharged before connecting the deck oven to the mains again 9.1.1 Replacing baking chamber lights CAUTION Technical damage! Put on gloves No sweat from hands on the lamp WARNING Danger of injury! Do not spray hot halogen lamps with water! Put on suitable gloves They will protect your hands from any heat given out by the old halogen lamp and protect the new halogen lamp against sweat from your hands Danger of injury! Do not spray hot halogen lamps with water or wipe them with a damp cloth They could explode due to the temperature difference!
