Could the beam support my weight? How would I it? My downward spiral into a deep depression had reached the bottom I felt completely hopeless and began to contemplate a permanent way out How in the world did I allow myself to get to this point? In four years, I had given birth to three sons (Austin was born on March 24, 1995; Pearson on April 30, 1997; and our baby Rhett on October 22, 1999) and had gained 70 pounds My body and spirit sagged under the pressure of the extra weight In 2003, Rhett was diagnosed with autism As any mother who has high hopes and dreams for her children, I struggled with the diagnosis and dedicated much of my time and energy into finding ways to “fix” Rhett I was physically exhausted and emotionally drained I coped by binge eating every night, which made me put on more and more weight At the same time, my husband’s business had collapsed, and we found ourselves under incredible financial pressure Every day felt like hell on earth I would make myself get out of bed each morning, even though I didn’t feel like it One day I was driving down the road and I was praying, as I always did, for some guidance on how to find a miracle cure for Rhett because I couldn’t accept that he wasn’t going to be “normal.” In the depths of my spirit, I heard God say, “Amy, you are not perfect and I love you Why does Rhett have to be perfect for you to love him?” Instantly I felt a burden lift off my shoulders as I realized that if I would just love my little boy and trust God, He would take care of my son This was the first step of my journey to get my life back on track Amazing Fitness Adventure for Your Kids.indd 4/28/11 11:03 AM The Amazing Fitness Adventure for Your Kids Though the road was unbelievably long and hard at times, eventually the financial part of our lives and the challenges of having a child with autism began to straighten out I knew that our weight was the last frontier to conquer One night in 2008, having reached clinical obesity at 229 pounds, I was sitting on the sofa eating ice cream, crying, and watching The Biggest Loser I suddenly decided to look on NBC.com to see what the process was for getting on the show A few months later, on Valentine’s Day weekend, Phillip and I were in Atlanta for the auditions Though we were hopeful, we didn’t hear anything from the network until two and a half months later From the moment we were contacted until we were actually on the show was a whirlwind Before we knew it, Phillip and I were on a plane to Los Angeles as finalists, though we were not yet promised a slot on the show The next week, Bob Harper, one of the show’s fitness trainers, surprised us at our home to announce that out of 300,000 applicants, we were chosen for Season of The Biggest Loser Tears flowed down my face, and I remember thinking that this was the last piece of the puzzle to getting our lives back There was no turning back Phil’s Story Even though I was an overweight child, I never let it stop me from becoming a success in business and being able to support my family In 2004, however, my mortgage broker business went to pieces after my business partner left It was a shock to my ego and a crushing blow to our bank accounts My family lost not only our luxurious lifestyle, but also our security For the first time in my life, I was at a loss about what to My weight slowly began to creep up the scales, but I wasn’t paying attention to it that much I was too busy trying to formulate a plan on how to get my family out of debt My health was the last thing on my mind I had no choice but to turn this devastating situation over to God about the same time my wife also surrendered We knew that with Him, there had to be a way out of the pressure Slowly but surely our lives started to turn around My wife and I found new careers in real estate We became the top sales agents, selling over 60 homes in our first year We also found a new therapy for Rhett that helped him improve his language and behavior While we were both feeling more whole-wheat elbow macaroni egg whites cups skim milk cups shredded cheese (one-half skim mozzarella cheese and onehalf Cabot’s reduced-fat cheddar cheese, mixed together) Dash of salt Directions: Preheat oven to 350 degrees F (175 degrees C) Bring a large pot of lightly salted water to a boil Add maca- roni and cook for to 10 minutes or until tender; drain Beat egg whites and milk together Pour half of the cooked macaroni into 9x13-inch baking dish Cover macaroni with half of the cheese Pour remaining macaroni into baking dish leaving a little room at the top Cover with remaining cheese mushrooms, sliced tablespoon minced garlic teaspoon Italian seasoning ½ teaspoon black pepper pound whole-wheat spaghetti, uncooked Nonstick cooking spray Directions: Coat large skillet with nonstick spray Preheat over high heat Add turkey and cook, stirring occasionally, for minutes Drain and discard fat Stir in tomatoes with juice, green pepper, mushrooms, onion, garlic, Italian seasoning, and black pepper Bring to boil Reduce heat and simmer covered for 15 minutes, stirring occasionally Remove cover and simmer for added 15 minutes Cook spaghetti Drain well Serve sauce over spaghetti Makes servings Tacos Ingredients: pound ground chicken or turkey (you can substitute black beans for meat) Chili powder, salt, and pepper (to taste) package of taco shells Reduced-fat cheddar cheese olives cup FAGE Greek yogurt (in place of sour cream) Salsa (recipe below) Guacamole (recipe below) Directions: Brown the ground chicken or turkey in a frying pan over medium-high heat Add chili powder, salt, and pepper to taste Fill each taco with meat My family prefers to add the other ingredients buffet style because they can choose the condiments they like the most I like to make a taco salad for myself (spinach, meat, cheese, tomatoes, black olives, salsa, black beans, and a few tortilla chips over the top for crunch.) * You can also use shredded chicken in place of beef or black beans Simply throw some chicken breasts, chili powder, salt, and pepper in a Crock-Pot or slow cooker on high for about hours or low for to hours Shred the chicken with a fork before serving as part of a taco meal Makes 10 to 12 tacos Ingredients for homemade salsa: large tomato, chopped small onion, chopped Cilantro to taste jalapeños, chopped and the seeds removed Salt and pepper Directions: We use a mini food processor that we got for about $15 You can make the salsa or guacamole and store it in the same container And it’s easy to clean Put all the salsa ingredients in the food processor Adventure for Your Kids Ingredients for homemade guacamole ripe avocados ½ cup red onion, minced 1-2 jalapeño peppers, seeds removed, minced tablespoons cilantro, finely chopped tablespoon of fresh lime or lemon juice ½ teaspoon coarse salt Dash black pepper ½ ripe tomato, chopped Directions: Mix all ingredients in your mini food processor to the desired consistency Serve with tacos or blue corn tortilla chips Hamburgers and Fries Ingredients for burgers: pound ground turkey or chicken egg white ¼ cup chopped onion ẵ cup spinach ẳ cup old-fashioned oatmeal Directions: Mix all ingredients together and form patties Spray a pan with nonstick cooking spray and cook patties until done Serve with desired condiments We suggest mustard rather than mayo and ketchup for a healthier condiment Lettuce, tomato, onion, and pickles are all great condiments to add We also serve our burgers on whole-wheat buns or the 100-calorie flat buns, as most of the sugar and empty calories are found in french fries: large sweet potatoes, peeled and sliced into fries Nonstick cooking spray Cayenne pepper Salt Spray butter Honey or sugar-free maple syrup (if desired) Directions for french fries: Preheat oven to 350 degrees Spray a baking sheet with nonstick cooking spray and put the sliced sweet potatoes on the sheet Spray with spray butter and sprinkle with cayenne pepper and salt Cook for 15 minutes or until tender Baking time will be determined by how thick or thin you slice your potatoes To add a sweeter taste, drizzle a little honey or maple syrup over the top minutes before you take them out of the oven You can also substitute cinnamon for the cayenne pepper, if desired Makes servings Blueberry Protein Pancake Breakfast Ingredients: cups whole-wheat instant pancake mix ½ cup water container blueberry Greek yogurt Flaxseed and wheat germ (optional) Turkey bacon Directions: Spray frying pan with nonstick cooking spray and cook turkey bacon Set it to the side Spray a griddle teaspoons black pepper teaspoons red pepper, crushed skinless chicken breasts (cut into nuggets or strips) Dash (or 2) paprika Nonstick cooking spray Directions: Preheat oven to 350 degrees F Add ½ teaspoon poultry seasoning to milk Combine other ½ teaspoon poultry seasoning and all other spices with cornflake crumbs and place in plastic bag Wash chicken and pat dry Dip chicken into milk, shake to remove excess, then quickly shake in bag with seasoning and crumbs Refrigerate for hour Remove from refrigerator and sprinkle lightly with paprika for color Evenly space chicken on baking sheet sprayed with nonstick cooking spray Cover with aluminum foil and bake for 40 minutes Remove foil and check to make sure it is cooked throughout The size of your nuggets will determine the cooking time slivers Directions: Mix yogurt with packets of stevia or xylitol sweetener Add PB2 powdered peanut butter Freeze for hour or until slightly firm Scoop in a container and top with fruit and nuts * If your children like vanilla ice cream, substitute vanilla flavoring for the PB2 You can also add whatever fruit your children like best Makes servings 10 Individual Pizza Ingredients: 6 English muffins cups prepared pizza sauce ¼ cup green or red bell pepper, cubed ¼ cup onion ¼ cup sliced black olives 1/8 teaspoon dried Italian herb seasoning cup part-skim mozzarella cheese ½ cup grated Parmesan cheese Turkey bacon or sausage cooked and crumbled (optional) Directions: Preheat oven to 350 degrees Slice English muffins in half and place them on a baking sheet Spoon pizza sauce on top of muffins
