0,6 -1,0 m/s for agent speed and 10 -15 rpm for container speed; and for quality evaluation of dried garlic criteria of essentia] oil content, sensory properties and SMER were the most interested The results showed that criteria all were impacted strongly ordering by drying speed, drying temperature, and drying agent speed, respectively Optimized condition for garlic drying on the model of the rotary heat pump drying determined were as followipgs: drying agent temperature, 45''C; drying agent speed, 0,79m/s; drying speed, 12,5 rpm; at that point, essential oil obtained was reached at 0,364%; the pungent, a characteristic odor of garlic was 4,54 by sensory profile; the burnt, a failure odor of drying process was 1,21 by sensory profile and the SMER was 0,72 kgHzO/kWh TAP CHf CONG NGHIEP NONG T H N - SO - 2011 39
