Sprinkle with tablespoons of granulated sugar and brown sugar Bake for an hour and allow the cake to cool Cut into small squares Serve Recipe 27: Fried Banana Rolls You can buy these as street food in the Philippines, or make it yourself at home It’s a simple comfort food The basics for the dish include bananas, wrappers and sugar, but the Filipino version adds jack fruit, which Yield: it more together in large bowl Make small well in center of mixture Add water, orange juice, vanilla extract, orange peel, egg yolks and oil Mix by hand until the mixture is smooth and has no lumps Beat egg whites with cream of tartar until they are foamy, in mixing bowl Add ½ cup of sugar gradually, beating until the mixture forms soft peaks Whisk straight up so that egg whites form mounds instead of sharper peaks Fold in flour mixture This will create your batter Pour it into muffin cups, 2/3 or so full Bake for 35-45 minutes in oven Cool in muffin pans for 10 minutes, then move to wire rack to finish cooling Serve Recipe 29: Ube Ice Cream The main ingredient in this ice cream is the ube This is the purple yam, noted for its bright color Ube is commonly found in tropical areas, including Australia, Africa and South America, as well as in the Philippines and the rest of Southern Asia Yield: 2-4 Servings Preparation Time: hours & 55 minutes including hours freezing time Ingredient List: teaspoon of vanilla extract, pure cups of cooked & mashed purple yams (ube) lightly beaten egg yolks & ¼ cups of sugar, granulated & ½ cups of milk, whole & ½ cups of cream Red and blue food coloring HHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHH Preparation: Combine sugar, cream and milk in sauce pan Slowly heat while mixing continuously until it is close to boiling point You don’t want to boil it Sugar should dissolve completely Place the egg yolks in mixing bowl, then pour slowly around cup of cream mixture while you are whisking Pour the egg mixture into sauce pan Continue to mix and heat Dip in a spoon If some liquid sticks to back of spoon, turn heat off Place ice cream in heat-proof container Add food coloring until the color is what you want Add the vanilla extract Allow dish to cool down After it cools, put in refrigerator for four hours or more Prepare ice cream maker Pour cream mixture and mashed ube in Churn using the instructions of the ice cream maker’s manufacturer It can be eaten now, for soft ice cream If you want it firm, freeze for six hours or more Recipe 30: Maja Blanca Maja Blanca is a favorite snack and dessert dish in a typical Filipino day It is creamy, soft, delicate and sweet It makes a perfect end to a great meal Yield: 12 Servings Preparation Time: hours & 15 minutes Ingredient for latik (caramelized coconut cream) tablespoons of sugar, granulated cups of coconut milk, thin For maja blanca (coconut pudding) tablespoons of corn kernels ½ cup of sugar, granulated ẵ cup of corn starch ắ cup of corn, cream-style cups of coconut milk, thin HHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHH Preparation: Bring the two cups of coconut milk to boil Stir continuously until the oil starts separating from milk This will take about ½ hour Skim oil and reserve in bowl Reduce heat to med-low Add tablespoons of sugar to the milk remaining Continue stirring while cooking until milk is crumbly and brown This will also take about ½ hour Remove the latik from heat Grease 8” pie dish using reserved coconut oil Heat the other cups of coconut milk, along with corn kernels, ½ cup of sugar, corn starch and cream-style corn in sauce pan on med heat Stir continuously until it thickens, or about 4-6 minutes Pour the mixture into prepared pie dish Cool until maja blanca has set Cover pie dish with plate Invert maja blanca on plate Slice and sprinkle using latik Serve About the Author Angel Burns learned to cook when she worked in the local seafood restaurant near her home in Hyannis Port in Massachusetts as a teenager The head chef took Angel under his wing and taught the young woman the tricks of the trade for cooking seafood The skills she had learned at a young age helped her get accepted into Boston University’s Culinary Program where she also minored in business administration Summers off from school meant working at the same restaurant but when Angel’s mentor and friend retired as head chef, she took over after graduation and created
