y u t pH, nhi t , n trình th y phân b ng enzyme papain, protease n m m c Aspergillus oryzae vi khu n Bacillus subtilis Sau th i gian th c hi n tài, thu c m t s k t qu nh sau: - S d ng enzyme papain v i hàm l ph ng cho k t qu t t nh t ng 1,6%, sau gi th y phân bánh d u pH 5,5, nhi t u 60ºC - S d ng n m m c Aspergillus oryzae 2%, sau 20 ngày th y phân cho k t qu t t nh t pH 5,5, nhi t 45ºC v i hàm l ng 4,28g/l, m amoniac 0,49g/l Hi u su t t o thành acid amin 26,83% - Vi khu n Bacillus subtilis v i hàm l qu t t nh t 3,57g/l, pH 6,5, nhi t m t ng s 14,87g/l, m amin ng 2%, sau 20 ngày th y phân cho k t 50ºC v i hàm l ng m t ng 14,47g/l, m amin m amoniac 0,58g/l Hi u su t t o thành acid amin 24,67% - Khi s d ng n m m c Aspergillus oryzae 2% k t h p vi khu n Bacillus subtilis 2%, sau 20 ngày th y
