before serving Strawberry Cheesecake Yield: servings Preparation Time: 30 minutes Total Time: 30 minutes Ingredients: For Crust: ¾ cup coconut, shredded ¾ cup raw sunflower seeds ¼ teaspoon salt tablespoons butter, melted For Filling: cups fresh strawberries, hulled and sliced 1½ teaspoons fresh lemon juice teaspoon liquid stevia ¼ teaspoon salt ounces cream cheese, softened ½ teaspoon organic vanilla extract cup heavy cream Directions: For crust in a food processor, add all ingredients except butter, and pulse until a fine crumb mixture forms While motor is running, add butter and pulse until well combined Transfer the mixture into a 9" pie dish With your hands, press the mixture in the bottom and up sides of pie dish With a paper towel, wipe out the blender Add strawberries, lemon juice, stevia, and salt to the blender, and pulse until a puree forms Transfer the puree to a bowl In a bowl, add cream cheese, and beat until smooth Add vanilla extract and heavy cream, and beat until fluffy Add puree mixture, and mix until well combined Place the strawberry mixture over crust mixture Freeze for at least 4–8 hours 10 Cut into slices of equal size and serve Conclusion If
