Read the article about the possibility of cultured meat Do you agree that cultivated seafood can become a new trend in a near future?

Singapore’s Shiok Meats and Vietnam’s Minh Phu Seafood have signed a memo of understanding to develop a combined R&D facility to help bring cultivated seafood to Asia

The new R&D facility will be based in Vietnam in a move Shiok and Minh Phu, Vietnam’s largest conventional shrimp producer and exporter, say is paving the way for conventional seafood companies to diversify their portfolios with sustainable alternatives

“Setting up a joint R&D facility with Minh Phu Seafood is a major milestone for us,”

Dr Sandhya Sriram, Group CEO, Chairman and Co-Founder of Shiok Meats, said in a statement “Our vision has always been collaborating with established seafood companies and hatcheries to add variety to the portfolio and food security narrative through aquaculture innovation, research, and tech transfer Our satellite R&D facility in Vietnam will focus on high-quality cultivated shrimp research and technology.”

Since launching in 2018, Shiok, which means “pleasure” in Malay slang, was the first company to produce cultivated shrimp, crab, and lobster

The companies say they will explore the development of cultivated shrimp, starting with a feasibility study The move is aligned with Minh Phu’s vision for developing state-of-the-art technologies for Vietnam’s seafood industry, eventually leveraging the tech for the global market It has been developing an integrated shrimp value chain from hatchery to farming, processing, logistics, import, distribution, and retail

The new facility will be Shiok’s third; it currently operates two satellite R&D facilities in Thailand and Australia Last November, Shiok opened Singapore’s first

“mini plant” for cultivated meat development

In 2020, Shiok debuted the world’s first cultivated lobster meat Last August, Shiok launched the world’s first cell-based crab meat, prepared by Chef José Luis Del Amo of TheTasteLab He created two crab dishes, Crab Cake and Chilli Crab, from cultivated crab meat and powder along with vegan pork mince OmniMeat

Earlier this month, South Korea’s Cellmeat debuted its cultured shrimp at the Seoul- based restaurant Sigolo in dishes prepared by Chef Kyong-Ho Lee Also this month, U.S.-based Pearlita debuted its plant and mushroom based oysters, a step toward its aim of producing cultivated and plant- and fungi-based hybrid seafood It also developed a biodegradable shell for the full oyster experience

Singapore is currently the only country in the world that has approved cultivated meat for sale and consumption But that wasn’t granted to a Singapore or Asian-based brand; approval went to California’s Eat Just in 2020 for its cultivated chicken It has been sold in the country ever since

Singapore is expected to greenlight more brands in the cultivated meat and seafood space The U.S and E.U markets expect approvals within the next two years

Brainstorming Techniques

1 Traditional Brainstorming: This involves a group of people freely suggesting ideas without any criticism or evaluation The focus is on quantity over quality initially, with the aim of generating a large pool of ideas that can later be refined

2 Mind Mapping: Start with a central idea or problem and branch out with related ideas in a visual diagram Participants can contribute ideas and connections, building upon each other's thoughts to explore different aspects of the topic

3 Brainwriting: Participants write down their ideas individually on sticky notes or cards, then share them with the group This allows for simultaneous idea generation without the pressure of speaking up in a group setting, and it can also encourage more introverted participants to contribute

4 Role Storming: Participants take on different roles or perspectives (e.g., customer, competitor, celebrity endorsement) and brainstorm ideas from those viewpoints This can help break out of conventional thinking and generate fresh insights

5 SCAMPER Technique: This technique involves asking questions related to different aspects of a product or problem: Substitute, Combine, Adapt, Modify, Put to another use, Eliminate, Reverse Participants use these prompts to generate new ideas by considering different perspectives and possibilities

1 Task 1: Read and role-play

Practices

Watch the video and work in pairs or small groups Discuss these questions

PM = Park Manager VS1= Vet Student 1

VS2 = Vet Student 2 S = Steve Leonard

P: Leadership in business requires a range of skills These include an ability to make decisions, good communication and knowing when to delegate tasks Leadership skills such as these are just as important in running a team as they are in managing a multinational Learning to lead a team can be a challenge

In Safari Vet School, sixteen veterinary students take that challenge and test their leadership abilities in real-life situations with dangerous wild animals The students have been selected from thousands of applicants to travel to South Africa where they will be supervised by specialists, including experienced TV vet, Steve Leonard Nadia is studying at Cambridge University She’s a high achiever – used to getting top grades The Vet School selectors were impressed by her determination

N: Failure is not something I cope well with If you want me to boss you, I will! People can be quite intimidated by me, I think I mean I’ve had people say they’re scared of me, which I don’t understand why, but obviously I must be quite ‘in your face’ maybe I kind of have one volume and it’s ‘loud’

P: Nadia’s sense of purpose means that she is chosen as team leader for the first task

An animal must be sedated, treated, put on a truck for transit and then woken up As team leader, Nadia has to make key decisions, motivate the group and ensure they all work together If the animal is not revived quickly, it may be harmed or even die It does not run smoothly Luckily the team manages to administer the reversal drug to wake up the animal The Park Manager is critical of Nadia’s management style in the team debriefing session

PM: There was far too much chatter going on And running around Everyone is a bit disorganized It took you fifteen minutes from when the trailer arrived up to when you actually gave the reversal OK? Far too long VS1: I think we just needed just one

71 person to like kind of control the operation Because I, literally, didn’t know what you guys were doing I was just on …

VS2: I was just focusing on the heart rate, the lung fi eld …

VS1: I didn’t know the trailer was there …

N: Yeah, we all got so side-tracked with immobilizing it that we forgot the whole point was just to get it on the truck And I felt that the team was disappointed with how I behaved as the team leader P: Nadia receives feedback from Steve, her mentor She admits that leading and motivating a group is different from motivating herself

N: I normally cope really well with adrenaline But looking back I think I cope well with adrenaline when there’s just me and I just have to think, ‘Right! I have to do this I’m going to do it’ Whereas when you’ve got a group of nine people that you’re trying to control and when …

S: You’re trying to control nine people?

N: Well … because … it was a group of nine and I was supposed to coordinate them

S: When you look back at this, how many questions did you ask of your team that were advice questions?

S: In terms of ‘What do you think we should do?’

S: I didn’t hear any Do you think you’d taken on too much responsibility?

N: Yeah definitely! That was the problem I was completely out of my comfort zone

S: You’ve just got a taste of what it’s like to be in charge How did that make you feel?

S: Did it? What you experienced was very, very difficult I don’t think you did that bad a job

P: It has been a tough learning experience for Nadia She now understands that leadership involves a range of skills – such as motivating all the team members, keeping focused on the main objectives of the task, and communicating clearly

Task 1: Listen and complete these tips with one word in each gap Which tip do you find the most useful?

We think about posture, for example, um, the way one stands, er, the way in which you can be upright but not rigid, um, the way you take charge of the space

For example, rather than hiding behind a table or a lectern, um, you try to get that direct contact with your audience

A problem comes, of course, with PowerPoint, where people want to stay near their laptop to change the slides, and obviously, the message is very simple, just use a remote and that will liberate you from your laptop

Um, but also the way that we use our eye contact to scan the room, rather than just look at the first few rows, so that everybody feels as though there's a conversation going on, no matter how far back they are or whether they're at the sides of the room

Um, the way in which we use modulation in our voices You know, the, the, the, the kind of intonation that we use

There is also sometimes perhaps a tendency to want to shout in order to be heard in a large room

If there's a microphone, try it out before the audience arrives, see how your voice sounds, get that feel for how you're going to sound, how you're going to come across, and modulate your voice accordingly

But also remember how important intonation is Um, English is the language of Shakespeare after all, so we have that capacity to produce all sorts of light and dark shades in our voices that add interest and get the audience really paying attention

Um, and I think also we need to think very carefully about how we control our gestures Um, certainly all of us have, perhaps, particular mannerisms that we might use

Um, but, you know, the flicking of the hair, um, or the nervous fidgeting with a bracelet or a ring, or the constant adjustment of the suit jacket, or the nervous cough can become a distraction to the audience, and all of that can happen in the first minute or so A minute is a long time when you're speaking

Task 2: Listen to two conversations between some conference delegates Tick the strategies that you hear the speakers using Which of them could you use as an icebreaker? What other icebreakers do you know?

Y: Oh, excuse me, could you do me a favor and pass the milk jug?

E: Yes, of course Here you are

Y: So, what did you think of the last presentation?

E: Great, wasn't it? I always enjoy her talks, don't you?

Y: Yes, she really knows how to captivate an audience, doesn't she? But it wasn't exactly what I was expecting

Y: Well, I thought there was going to be a panel discussion at the end

E: Oh, I think that's coming up after the coffee break

Y: Oh, I see And What do you think of the conference so far?

E: Not bad Fewer people than last year, aren't there?

Y: Yes, it must be the venue Copenhagen is not exactly the cheapest city to get to, is it?

E: No, that's true Do you mind me asking where you are from?

Y: Oh, I'm from the UK, Birmingham And yourself?

Y: Really? Oh, sorry, I didn't realize

E: No, no, that's all right Copenhagen is expensive, I know

Y: Well, you speak excellent English, if you don't mind me saying

E: Thanks Actually, my sister's doing research at Cambridge University So, you know, I visit her often

E: Uh-huh My name is Erik, by the way

Y: Nice to meet you, Erik I'm Yasmin

E: Oh, I think we're starting again Shall we go through?

Listening

(MT = MARTIN THOMAS, CH = CAROLINE HOLLOWAY, GR = GUILLEM ROJAS, CR = CAROL RUECKERT)

MT: Hi, good morning everyone, so the purpose of the meeting this morning is to have a look at the international sales conference we're having next, um, year in

January, and our objective here is to come up with location, activities that we can do in the, um, in the conference and look also at the accommodation and also some leisure-time activities so… What I’d like is for us to, um, brainstorm some ideas OK, guys?

CH: Yeah, it sounds great

MT: OK So maybe Caroline, do you want to have you got any ideas for where we can have this?

CH: Yeah, um, I was thinking, maybe we should go to Amsterdam, and we've had a few, um, conferences there in the past and they've been really successful, the facilities were great, so I think that would be a really good idea

GR: Actually, yeah, I also tend to like the summer conferences, like in Amsterdam, it was great, I I'm just a bit worried about, you know, like the time of the year because it's January, so it might just as well be just like a location more like in southern Europe, maybe like south of Portugal which would be, you know, it could be interesting like for everybody, you know

MT: That's great Any other ideas, any options?

CR: Well, I, my my suggestion would be Florence I think it's a great city, um, lots of things to do there, there's great food obviously, um, and they have very nice accommodation as well

MT: Mm-hm, OK, that's great Now, can we think of some, um, activities that, er, we can do at this sales conference?

CH: Mm, um, product launches, um, we always have something coming out, um, ah, at the beginning of the year, so, um, that'd be a great, um, session to have

CR: Mm, and probably following that would be some product training

CH: Good idea, yeah, mm-hm.
