requirements covering the construction and operation of air inlets and outlets components including technical safety, ergonomic and hygienic features This European Standard is applicable to ventilation systems in commercial kitchens, associated areas and other installations processing foodstuffs intended for commercial use Kitchens and associated areas are special rooms in which meals are prepared, where tableware and equipment is washed, cleaned, food is stored This European Standard is applicable to ventilation systems except those used in domestic kitchens A method of verification of each requirement is also specified Unless otherwise specified, the requirements of this standard need to be checked by way of inspection and/or measurement NOTE Please note the document, the following terms and definitions apply 3.1 kitchen part of a building where cooking processes are carried out, their connecting floors and distribution corridors, ancillary rooms such as food stores, cold rooms, food preparation areas and appliances are being cleaned 3.2 supply air side 3.2.1 supply air distributor component in circular, quadratic or rectangular construction with built-in parts steering air in different direction 3.2.2 textile air passage device lint-free fabric hose permeable to air installed in ceiling area for low induction when supplying air 3.2.3 air passage components and respective air flow modes of supply air 3.2.3.1 displacement air terminal device wall device for creating an horizontal unidirectional air flow, located near to the floor for can be easily accessed Designations 4.1 Supply air side Supply air passage devices are shown in Table Table shows examples of current ceiling configuration and design criteria, but manufacturers are free to follow the alternative designs and configuration, provided, that the product/equipment conforms to the essential requirements of the relevant directives and/or national regulations Table — Construction and function 5.1 General remarks The requirements shall be verified by inspection and/or measuring 5.2 Adjustment in the room 5.2.1 Supply air passage devices For displacement air terminal device wall air passage component, ground clearance of 0,2 m minimum installation height shall be provided for reasons of cleaning The installation height shall be chosen in order to fulfil comfort requirements and to avoid any risk of bypass the supply air directly to the extract air The requirements of prEN 16282-1 shall be fulfilled 5.2.2 Extract air passage devices Aerosol-loaded extract air from kitchens such as: — cooking areas; — portioning rooms; — meal distribution areas; — meal serving areas (also in the dining hall); — crockery and washing-up rooms; shall be conditioned prior to the access in the air duct using effective aerosol separation in accordance with EN 16282-2 and EN 16282-3 Extract air passage devices without aerosol separator are only permitted to be used within areas in which no aerosol occurs 5.3 Design, construction and function The air inlet shall be mounted to be flush fitting The area where particles accumulate shall be as small as possible 5.4 Air passage devices materials and surfaces Air passage devices, except aerosol separators shall be manufactured and installed so that a front side adjustment of the nominal volumetric flow rate is possible BS EN 16282-4:2016 EN 16282-4:2016 (E) The materials used shall be rot-proof, non-porous, wear-resistant, resistant against detergents and disinfectants, inert to foods and beverages Materials such as glasswool or rockwool, which are often used as components shall never come into contact with food, and shall not be in the vicinity of kitchen staff, as inhalation is dangerous 573-3 or higher quality aluminium alloys shall be used The material and ceiling construction shall be strong enough to prevent the ceiling from creating vibration or drumming Technical safety requirements Insofar as nothing to the contrary is stipulated, the requirements are checked by inspection and/or measuring The shape and dimensions of the devices in conjunction with the quality of the respective materials shall ensure that air ducts and their accessories are permanently safe to operate and easy to maintain and clean All accessible devices shall be designed in such a way that there is no risk of injury Air passage devices shall not be made of plastics when used in the area above the thermal kitchen appliances This area is limited by a collateral minimum An air inlet shall not disturb the thermal airflow Hygienic requirements 7.1 General remarks Air passage devices shall be tested periodically with respect to contamination, damage and corrosion; the same applies randomly for built-in perforated plates, wire netting or sieves If required, cleaning or exchange shall be carried out When testing or cleaning, the operating efficiency and the adjustment shall remain unimpaired As air passage devices with high induction of ambient air and extract air passage devices often show solid deposit build-upon their visible surfaces after continuous operation, these shall be cleaned if required The same requirements apply for extract air passage devices as for supply air passage devices The passages shall be built in such a way that surveying, maintenance and cleaning can be carried out easily and safely The construction shall be designed with an even internal surface Due to acoustic or thermal considerations, materials combined with the passages shall include a non-hygroscopic and indelible surface Porous or absorbent materials shall not be used Perforated devices in the area of shower and splash water shall be constructed in such a way that permeate liquids not accumulate, but can flow off easily All devices used in the working area where the kitchen staff are, shall be designed so that they can be opened with customary tools and all parts can be cleaned from every side and regularly fumigated Parts which can be removed or detached for cleaning shall be constructed so that they can be put back into the right position and function easily BS EN 16282-4:2016 EN 16282-4:2016 (E) All materials coming into contact with foodstuffs shall be free of contaminants in accordance with the national regulation and EU regulation 1935/2004/EC 7.2 Cleaning intervals Supply air passage devices and their individual parts shall be cleaned at regular intervals, however, at least half-yearly they shall be checked for contamination and cleaned if contamination and cleaned if required The cleaning intervals of aerosol separators are stated in prEN 16282-6 and shall be used in accordance Inspection and cleaning, shall be documented whereby the date of cleaning, the detergent used, the scale of the devices cleaned and the person in charge shall be recorded Instructions 8.1 Installation instructions Installation instructions shall be in the national language of the country of the place of use and shall be enclosed for assembly with each air inlet and outlet They shall be kept brief and contain all the important information for installation and maintenance in an easy-to-understand way The installation instructions shall at least contain the following information: — instructions on special installation conditions regarding accessibility and positioning of the air passages respectively which occur due to necessary cleaning and maintenance; — in case of source air passage components it shall be pointed out that the air passages shall be installed with clearance to the floor due to hygienic reasons; — technical data: — scope; — dimensions; — volumetric flow rate; — loss of pressure; — mode of air flow — indications concerning the adjustment of the volumetric flow rate if intended by construction 10 BS EN 16282-4:2016 EN 16282-4:2016 (E) 8.2 Operating instructions Operating instructions for the user in the national language shall be enclosed with each air inlet and outlet They shall be kept brief and shall contain all the important information for operation and cleaning in an easy-to-understand way and shall at least contain the following information: — instructions on cleaning and on the cleaning intervals (e.g by making reference to the HACCP guidelines, which are covered in the Regulation (EC) 852/2004) as well as in connection with the loss of pressure of the cooking fume separator; — instructions on the use of suitable cleaning agents; — name of manufacturer; — type, model, trade name; —
