Association Culinaire Franỗaise (North West Branch) North West Commis Chef of the Year Competitions 2019 Monday 25th March 2019 Venue Llandrillo College, Llandudno Road, Rhos on Sea, Colwyn Bay, LL28 4HZ Dear Colleagues Happy New Year! I hope the term has started well for you all! It is once again time to submit your applications for your students to enter the ACF North West Commis of the year Competitions for 2019 The ACF Committee are continuing to run the North West Commis of the Year event with separate competition categories The categories will be • ACF North West Commis Chef of the Year Competition 2019 Eric Walker Trophy • ACF North West PASTRY Commis Chef of the Year Competition 2019 Dougie Simpson Trophy • ACF Restaurant Skills Competition 2019 Rising Star Award The students you select to enter will ideally be a full time student following a full time Level or programme of study, OR participating on a work based training programme at a Catering College, at Level 2/3, with no higher than commis chef status in the work place The competitions will commence at 10.30am and conclude at 1.30pm ENTRIES for all competitions MUST BE RECEIVED by Thursday 31 st January 2019 Applications to be returned via email to sukenyon@hotmail.com The Commis of the Year Competitions are always extremely well subscribed events, so I would urge you to ensure your entries for both events are submitted by the due date in order to avoid disappointment! The trophies and certificates will be presented formally at the ACF Presidents Awards Gourmet Dinner on Saturday 11th May 2019 A list of the dishes and ingredients together with more specific details of the competition format will be circulated very shortly We can reveal however that the theme of the competition will focus on the work of the great Chef Paul Bocuse We look forward to receiving your entry details as soon as possible, on the attached pro-formats The format for the competitions will be as follows: Eric Walker Commis Chef of the Year Competition 2019 • • • • • You may submit student per College Each competing student to set up work station with equipment and ingredients Student to prepare, cook and serve a two course menu for two persons Student to display their written menu, detailing the dishes involved Student to demonstrate creativity, flair and imagination together with appropriate organisational skills Student to demonstrate appropriate knife skills Students to work safely and hygienically throughout Time allowed is three hours Ingredients to be supplied by the ACF Colleges must provide own competition kit of equipment • • • • • Dougie Simpson Commis Pastry Chef of the Year 2019 • • • • • You may submit student per College Each competing student to set up work station with equipment and ingredients Student to produce two plated desserts Student to display their written menu, detailing the desserts involved Student to demonstrate creativity, flair and imagination together with appropriate organisational skills Students to work safely and hygienically throughout Time allowed is three hours Ingredients to be supplied by the ACF Colleges must provide own competition kit of equipment • • • • Restaurant Skills Rising Star Competition 2019 • There will be skills overall to demonstrate over categories (see below) Competitors will be required to a) Table layup - covers for soup starter, fish course, main course and dessert plus side plates/knives The layup should include clothing up of table plus napkin folds, these being Fan, Bishops Mitre, Lily and other of competitors choice b) Flambé skill - Crepe Suzette Pancakes (2 per serving) will be supplied ready cooked Liquor Floating Coffee - Using Cognac • • These challenges will be scheduled between 10.30am and 2pm Colleges are invited to enter student per category Please not hesitate to contact me for any clarification!
