Ventilation openings for splash area In case of technical constraints, ventilation openings may be in the splash area In such cases, they shall comply with B.3.5.1 and they shall be cleanable B.3.6 Hinges Whenever possible, the manufacturer shall eliminate swivel points from the food area If their presence in the food area is technically necessary, then:  they shall be easily removed;  if they cannot be removed, all surfaces shall be accessible Assembly with a fixed part shall be made by a joint designed to prevent any infiltration Access to all these areas is acceptable when the passage Control panel B.3.7.1 Control panel in the non-food area Normally, the control panel shall be in the non-food area and shall also be cleanable whenever possible B.3.7.2 Control panel in the splash area If it is not possible for technical reasons to place the control panel in the non-food area, the various controls shall have easily cleanable surfaces The distance L between two elements shall be greater than or equal to:  20 mm (see figure B.25);  12,5 mm if their height h is less than or equal to mm (see figure B.26) If the above requirements cannot be complied with, controls shall be according to the manufacturer's declaration, the food suitability certificates of the suppliers and the reports of migration tests, where applicable If there is a suspicion that the equipment is insufficiently resistant to mechanical aggression for certain coatings or materials (scoring, shock, abrasion) or to chemical effects (acid or alkali agents, salt spray, etc.), it is up to the inspection laboratory to ask the manufacturer to run complementary tests by sampling The surface condition shall be checked in accordance with B.2 using a rugosimeter and/or by comparison with viso-tactile specimens B.4.2 Design The test shall be run according to drawings on the equipment by means of shims to defined dimensions and radii B.5 Information for use B.5.1 Installation handbook The manufacturer shall give necessary instructions to permit access for cleaning 44 BS EN 12852:2001+A1:2010 EN 12852:2001+A1:2010 (E) B.5.2 Instruction handbook The manufacturer shall describe cleaning processes (e.g types of detergents, cleaning means, action duration and frequency) according to the treated foods and the risks involved B.5.3 Maintenance handbook The manufacturer shall specify all necessary measurements needed to maintain the required hygiene level (e.g degradation of surface state, wear of seals and certain parts) 45 BS EN 12852:2001+A1:2010 EN 12852:2001+A1:2010 (E) Annex C (informative) Interlocking device combined with the food processor cover when this is removable The purpose of this informative annex is to show an example of a device complying with the principles set out in this standard and the application of which has been validated by experience This example is not restrictive Other solutions may be adopted provided that they comply with the same principle Principle: One single position switch, mechanically actuated by a cam/spring mechanism The cover (guard) can be removed for cleaning (hygiene requirements) due to the spring action (see shall be designed so that it operates the switch even if it has a broken wire (pitch, diameter of the wire, closed ends, guiding, corrosion resistance shall be considered with a particular attention),  a low friction ring avoids any possible binding of the cam,  the seal prevents any water and dust entry and avoids any rubbing or jamming of the mechanism,  all parts shall be corrosion resistant Advantages:  this interlocking device is compatible with the minimal hygiene rules and the need to be able to clean the cover easily between two different operations (it can be easily dismantled),  the whole mechanism can be put in a water and dust tight housing Disadvantage:  strictly speaking no positive mechanical action of the cover (guard) on the actuator of the switch 47 BS EN
