Scope ! 1.1 This European Standard specifies the safety and hygiene requirements for the design and manufacture of vegetable cutting machines which are transportable and have a maximum rated power less than kW This European Standard deals with machines intended for cutting, shredding, dicing, chipping and grating of food products in which the product passes through the machine As described in 3.2.1, the types of machines in the scope are machines with a fixed chamber and rotating blade or cutting disc, with a rotating drum and fixed blades or machines with horizontal reciprocating cutters (mainly used for potato chipping) 1.2 This European Standard specifies all significant hazards, hazardous situations and events relevant to vegetable cutting machines, when they are used as intended and under conditions of misuse which are reasonably foreseeable by the manufacturer (see Clause 4) This European Standard deals with the hazards which can arise during commissioning, operation, cleaning, removal of food blockages, feeding, changing the tools, maintenance and decommissioning of the machine 1.3 This European Standard does not apply to: food processors (see EN 12852); vegetable peelers (see EN 13208); vegetable cutting attachments which are mounted onto machines having an auxiliary drive hub (see EN 12851); planetary mixers (see EN 454); domestic machines 1.4 This European Standard is not applicable to vegetable cutting machines which are manufactured before the date of its publication as EN." one or several tools: cutting plates or blades, hereafter called "cutting devices" A cutting plate or blade consists of one or more cutting edges fixed to a frame Fixed cutting blades may be installed in conjunction with moving plates; shall comply with: either a method complying with the principle of figure B.6 for the food area whereby manufacturer can specify in his instruction handbook the cleaning facilities that are required (e.g high pressure jet); or the manufacturer shall take all necessary measures to plug the spot-facing with sealed plugs B.3.3.3 Fasteners for non-food area No particular requirement B.3.4 Feet, support and bases for cleaning the machines underneath B.3.4.1 Table-top machines Table-top machines can be: B.3.4.1.1 No requirement shall be given for table-top machines which are portable by a single person (the force required to lift them less than or equal to 250 N) once all the removable elements have been disassembled for cleaning B.3.4.1.2 No requirement shall be given for tilting machines if the force required for tilting is less than or equal to the minimum portable weight However, the equipment shall be provided with specific elements for the tilting movement to ensure stability in the tilted position (suitable feet, gripping means, etc.) and the tilting procedure shall be clearly specified in the instruction handbook B.3.4.1.3 Non-portable and non-tilting The machines are provided either with feet or with a base To determine the minimum height (H) of the feet, the access distance (P) given in table B.3 permitting the cleaning of the positioning surfaces floor with an interposed continuous and sealed joint, the instruction handbook shall specify the jointing method (see figure B.9.1), or their feet (H) shall be higher than or equal to 150 mm Figure The direction of any fluid flow shall prevent any infiltration or retention in the machine Whenever possible, for machines standing on the floor, a guard shall prevent access to rodents in all technical areas of the machine The smallest opening shall be less than or equal to mm in dimension B.3.5.2 Ventilation openings for splash area In case of technical constraints, ventilation openings machines standing on the floor, a guard shall prevent access to rodents in any technical areas of the machine The smallest dimension of the opening (b) shall be less than or equal to mm (see figure B.11) B.3.6 Hinges Whenever possible, the manufacturer shall eliminate swivel points from the food area If their presence in the food area is technically necessary, then: they shall be easily removed; if they cannot be removed, all surfaces shall be accessible Assembly with a fixed part shall be made by a joint designed to prevent any infiltration Access to all these areas is acceptable when the possible B.3.7.2 Control panel in the splash area If it is not possible for technical reasons to place the control panel in the non-food area the various controls shall have easily cleanable surfaces The distance L between two elements shall be greater than or equal to: 20 mm (see figure B.13.1); 12,5 mm if their height h is less than or equal to mm (see figure B.13.2) If the above requirements and the reports of migration tests, where applicable If there is a suspicion that the equipment is insufficiently resistant to mechanical aggression for certain coatings or materials (scoring, shock, abrasion) or to chemical effects (acid or alkali agents, salt spray, etc.), it is up to the inspection laboratory to ask the manufacturer to run complementary tests by sampling The surface condition shall be checked in accordance with B.2 using a rugosimeter and/or by comparison with viso-tactile specimens B.4.2 Design The test shall be run according to drawings on the equipment by means of shims access for cleaning B.5.2 Instruction handbook The manufacturer shall describe cleaning processes (e.g types of detergents, cleaning means, action duration and frequency) according to the treated foods and the risks involved B.5.3 Maintenance handbook The manufacturer shall specify all necessary measurements needed to maintain the required hygiene level (e.g degradation of surface state, wear
