Answers: To ensure the trolleys are stacked properly To ensure the trolleys are loaded in such a way that it is presentable for the guests Page of GEN-0006 STEPS HOW/ STANDARDS The purpose of the kitchen trolley is to transport food from the kitchen to (or vice versa): – Other kitchens – Restaurants – Banquet rooms – Deli The trolley has to be loaded correctly and to be safe to push All food has to be covered The trolley shelves have to be clean at all times When setting up food in a banquet room, in which guests have already arrived, the trolley should not be brought inside the function room All food has to be carried by hand Trolleys should always keep in back areas, only for loading & up-loading in public areas Cold food and hot food should not be placed together Stewarding will be responsible to ensure that all types of trolleys are properly cleaned and sanitized TRAINING QUESTIONS Why we use trolleys for transportation?
