added value Extracting oil from the finishing tempura shrimps is always considered one of the most important factor to evaluate the quality of this product This will effect to the quality of the shrimps as deliciousness, non-greasy feeling for customers, side effect of the oil inside the shrimps However, in currently, these is not equipment which can meet the requirements of extracting oil from finished products The Tempura shrimp frying line (version 1) transferred by the Bio-Mech Lab research team to the customer is using an open-loop control algorithm to dry the finished shrimp So, with this issue the efficiency is not high, specifically verified the amount of drained oil in shrimp Tempura shrimps after frying still remain a lot of oil inside the shrimps So, this phenomenon needs to be improved to optimize the oil extraction in the fried shrimps to improve the quality of the shrimps This research proposes the optimization method for controlling parameters of the oil draining system in tempura fried shrimps Focusing on evalution and improvement the parameters on the oil draining module such as: moving speed of shrimp conveyor belt, drying temperature, air flow, air speed, air direction, etc Through the ssecel method of a reasonable control algorithm to control (Ex PID or Fuzzy or GA with many different input indicators sets) important parameters determine the quality of the finished shrimps This research will contribute to improve the quality of the finish tempura shrimps according to the criteria of the amount of oil extracted from the shrimp before and after applying the controller The results of this study will also be verified and evaluated through simulation software such as ANSYS and tested on the The Tempura shrimp frying line (version 2)
